About this Cook
I'm 28 years old and take care of some great kids in my home. Happily married. Have 4 pets..a dog (Tiny), 2 Blue and Gold Macaws (maple and Harley) and a Quaker (Oscar). Spend lots of time in the kitchen trying new recipes, both my husband and I are very adventurous when it comes to food.
My favorite things to cook
I love to bake just about anything...soups are a favorite, chicken dishes, and creative dishes that encourage my son to eat.
My favorite family cooking traditions
Christmas time baking...lots of variety, lots of fun, everyone helps mix, bake and taste. So much fun. Also, teaching my son to cook, like my parents taught me, as soon as I was old enough to hold a spoon.
My cooking triumphs
My biggest triumph would have to be of course earning my catering/gourmet cooking diploma. As for actual recipes, I am great at pork tenderloin...soups and sauces. My biggest high is teaching someone else how to make something. OH, and making scottish shortbread that my Scottish decent husband actually approved of.
My cooking tragedies
It took me a long long time to perfect cheesecake....and many a brick of cream cheese was harmed in the process. But practice does make perfect, and now all my friends envy my cheesecake making ability.

Black Joe Cake
This recipe actually wasn't too bad. My day started out wanting to use up some strawberries and a sure fire way is a trifle. I usually keep cake trimmings in my freezer just for this but was out so went in search of an easy cake. My husband needs to eat low cholesterol so the no butter and no egg aspect of this recipe really appealed to me. I made 1/2 the recipe which generosly filled a square baking dish. I doubled the cocoa. The texture was nice. It wasn't real sweet..but that could have been because I added more cocoa. I would still add the cocoa just maybe a touch more sugar with it. I would also add a dash of salt to deter the "bland" flavor a little more and possibly a splash of vanilla. Came out of a lightly greased glass pan with ease. Was perfect for the application I was using it for. Would probably perk up the flavor a lot with some icing as well. All in all..for a recipe which uses such cost efficient ingredients and keeps the fat and cholesterol down...it's a thumbs up in my book.

Shortbread Cookies II
This is a fairly good recipe. I cut in in 1/2 because I didn't want a ton of cookies. And I used about 1/4 cup cornstarch in place of some flour....cornstarch helps make a melt in your mouth shortbread. For some of them I put a chocolate chunk in the middle, rolled in sugar and baked as a ball. They took about 20 minutes to bake at 350 in my oven. I like them...not sure how Hubby will feel about them...he's more of a traditional scottish shortbread lover. But overall it's not too bad a recipe. Oh I also whipped them with an electric mixer..wouldn't work for using cookie cutters though.

Simple Beef Stroganoff
This was a great base recipe. Thanks Brenda! I did however add a few things. I cooked 1 onion and some freshly minced garlic with the beef. I also added some worchestershire sauce, 1 tsp oregano, 1/4 cup beef broth, and some mushrooms to the mix. I did not stir the sauce and noodles together. That way I can use the leftover sauce on rice or potatoes, to change it up a bit. It was absolutely tasty ... very good! I will definately be making this recipe again.
