Baked Swiss Chicken

This was VERY easy. I used frozen chicken breasts, cream of mushroom soup because that's all I had, I typically use the cream soup base recipe from this site whenever a recipe calls for cream of chicken soup but didn't feel like going to the trouble tonight. Then I added fresh mushrooms to the baking dish with the chicken before I topped it with sauce, cheese (the swiss didn't melt like some cheeses might, as mentioned by another reviewer, but I actually liked that it maintained it's shape rather than melted into the sauce and became too gooey) and breadcrumbs (I used italian breadcrumbs instead of croutons, again because it's what I had in the pantry). Baked it for 45 mins. The sauce had a good flavor but it was a bit soupy (I'm sure the frozen chicken breasts were to blame) but all in all, it was pretty good. Not amazing but not bad.

Slow Cooker Chicken Stroganoff

I morphed the leftovers of this into another meal by adding a can of diced green chiles and making enchiladas suiza. To make the stroganoff, I used frozen chicken breasts and instead of italian packet, I sprinkled (eyeballed) garlic powder, onion powder, lemon pepper and basil over the chicken, added 2 T butter and I couldn't resist adding a little liquid, so I also added about 1/3 c white wine. After cooking for several hours, I added the cream cheese and healthy request cream of chicken soup but it needed something so I added about 1 tsp lemon pepper and 2 T lemon juice along with 1/2 c sour cream. It wasn't bad...we had it over rice.

Starkey's Mashed Potato Pizza

This was sooooo good!!! I used the Quick and Easy Pizza Crust recipe from this site and cooked the pizza on our grill outside rather than in the oven. My family loved it!

Three-Step Salad

I really don't understand all of the rave reviews for this recipe. I really had high expectations after reading that the dressing was "TO DIE FOR" but I was very disappointed. The dressing was FAIR, AT BEST. The salad ingredients weren't all that great either. The mandarin oranges were merely mushy and barely added any flavor. Sorry!

Bacon and Tomato Cups

This really sounded good but didn't turn out as well as I'd hoped. The biscuits were too big....definitely worked out better when I quartered the biscuits as another reviewer mentioned and rolled them into balls, flattened and shaped them into the mini muffin pan. Also, it just tasted like mayonnaise....and I really like mayo...but that was almost all you could taste.

Cheesy Brat Stew for the Slow Cooker

This turned out pretty well but took quite a while for the potatoes to soften. I turned the crockpot up to high for a couple of hours and then reduced it to low for 4 more hours. I also made a few other changes. Removed the casings from the brats and added a diced onion while browning. Also added a soup can full of water rather than 2/3 c, didn't drain the green beans and still worried about not having enough liquid. So during the last hour of cooking I added about 1/2 c milk. Just before serving I added the cheddar and it turned out great. Not greasy at all...and pretty thick. Definitely stew-like. I don't think I'll rush to make it again but we all thought it was pretty good.

Sausage Balls

My kids really liked these. It took some work to get the mix to incorporate...I kneaded the ingredients together by hand for what seemed like an hour :) but was really only about 10 minutes. It was worth the effort, they weren't dry and crumbly. I served them with a honey mustard dipping sauce: 1/2 c dijon, 1/2 c honey, 1 1/2 tsp. oil and 1/2 tsp. lemon juice.

I used vanilla vodka because that's all I had on hand and I thought it made the drink taste like cake batter which for my taste, made it too sweet. My mother in law loved the vanilla vodka though...she thought it cut the tartness of the drink. Ha ha....one more thing for us to debate/disagree on ;) It is a good drink though....nice and refreshing.

Slow-Cooked Chili

I love this recipe. It tastes like my favorite canned chili....only so much better homemade. I used 1 lb. ground turkey (misread the ingredients calling for 2 lbs.) instead of beef and thought it was going to be way too watery but after 3 hours on high, it looked awesome. I let it cook for another hour and served it over baked potatoes. YUM! I love the simplicity and the taste. I prefer the subtle chili flavor and the mild flavor made it a bigger hit with the kids.

Cream Soup Base

Turkey Soup with Slickers

Double Quick Dinner Rolls

Sorry...these didn't work out for us. They had a weird texture. I omitted the onion powder and they were bland. They definitely were quick but that's about it. My son who LOVES any and all rolls. Took one bite and threw it away.

Mom's Country Gravy

Don't skip the browning step on this one, otherwise it will taste like paste. Once the flour is added to the oil it should be browned until it looks like peanut butter before adding the milk. If it's browned properly there isn't much need for extra spices. Love this recipe!

Yummy Sweet Potato Casserole

This got rave reviews at Thanksgiving BUT silly me....I actually used SWEET POTATOES and not yams....so the color was all wrong and it was very sweet. It was kind of yellow not orange. But still tasted awesome.
