Oaxacan Tacos

Deliciosoooo. I threw the peppers and onions in with the steak, just to make it easier to make the taco because we were feeling lazy, and we added some chopped avocado on top of the meat, before the lime juice. SO GOOD.

Chicken Lo Mein

Had to make do with what we had: I only used one (giant, ha) chicken breast, used regular spaghetti noodles, and baby bella mushrooms instead of shiitake. Still delicious! My husband, who thought he hated lo mein, ended up eating most of the leftovers. (This is one of those meals that is even better the second day.)

Hot German Potato Salad III

I will admit, I was a bit wary of this recipe, since I generally hate potato salad. I needed to use up some potatoes, though, and I figured it was different enough from the potato salads that come in plastic boxes that I might like it. I LOVED IT, it tasted great as a side when we had grilled steak, and it was just as good reheated the next day. The only mod I made was to leave out the celery seed, but that's only because we didn't have any.

Cobb Salad

This was GOOD, so good I took leftovers for lunch the next day. (The avocado browns overnight, naturally, but it doesn't squick me out, although it bothers my husband. MORE LEFTOVERS FOR ME.) I think this recipe would be heavenly as-is, but even with the substitutes I had to use it was five-star worthy. I used cheddar instead of bleu cheese, a romaine lettuce mix instead of iceberg, and I left out the green onions because we didn't have any.

Russian Mushroom and Potato Soup

I could not believe how good this soup was, oh man. I didn't have half-and-half, so I used sour cream (I should have used less sour cream than 1 cup or less flour, in hindsight, the combo made the soup too thick). DELICIOUS. Even my mushroom-iffy husband loved it. Definitely going to make this one again!

Spaghetti Carbonara

I've been having strong cravings for Spaghetti Carbonara, but because I'm pregnant I was nervous about eating it the way I'm used to, with the eggs just heated through, so this recipe was perfect. I did add pepper, like a few other people mentioned, and I took out about half of the bacon grease that was in the pan before adding the butter. Delicious!

Easy Italian Chicken II

This recipe gave me the basics when I wanted to know how to cook chicken I'd marinated in a store-bought jerk marinade. Most of the marinated chicken recipes I found involved grilling, so this one helped me as far as figuring out the time needed to cook the chicken, something I'm kind of hopeless with. I did turn the temp up to 375°F instead, since my chicken breasts were superthick, and an hour was the perfect amount of time.

Yummy Pork Chops

Easy enough for my husband, a non-cook, to make, and they turned out tasty. We did have super-thick pork chops so we had to modify the cooking time. The finished product is a little lighter in flavor than I'd like, but the flavor that's there is good.

Extra Easy Hummus

this is the first time I've ever made (or had) hummus -- it's great! extremely easy to make and delicious, and it gets even better after sitting in the fridge overnight. even my two-year-old picky eater ate some of it!

Mac and Cheese II

this is a very good basic recipe. like other reviewers, I added some spices (salt, onion powder, ground mustard, worcestershire sauce) and topped with bread crumbs. also, instead of elbows, we use bowtie pasta. sometimes I'll add some good cubed ham to the mixture before putting it in the casserole dish, too.

Angie's Dad's Best Cabbage Coleslaw

DELICIOUS! everyone loved it, even me, and I have a deep-seated aversion to coleslaw. this recipe makes a huge bowl of the stuff, and we left it in the fridge and snacked on it; it really did get better each day. there was a good amount of liquid at the bottom of the bowl, but we just used a slotted spoon for serving. I didn't make any modifications to this recipe; it's perfect as is.

Brown Sugar Meatloaf

this is the best meatloaf I've ever made; the only change I make is to use cheap store-bought bread crumbs instead of saltine crackers, mostly for convenience. and sometimes I'll add a little minced shallot. we have this meatloaf, along with garlic mashed potatoes and a salad, about once a week in winter!
