Awesome Baked Sea Scallops
This was very yummy and easy to make. I thought there were way to much bread crumbs though and they did not get very crunchy because alot of them fell to the bottom. I will probably add mushrooms next time and less bread crumbs.

Zesty Tilapia with Mushrooms
Wonderful!! Very easy to make and a great recipe for a hot summer night. I used baby bella mushrooms and it was fabulous! Very tasty!

Eggplant and Mushrooms with Wild Rice
This is a very yummy, filling, comfort food!! I put in more minced garlic since I love garlic. Very easy to make and I used vegetable broth instead of chicken and it was great!!
