Spicy Cucumber Soup
This is excellent, even though I had to sub paprika for cayenne and left out the sesame oil. I also halved the amount of curry powder. Perfect.

Chicken and Leek Casserole
Very easy and tasty for a midweek dinner. I used mushroom soup and topped with Pillsbury Grands instead of pie crust.

Mint Sauce
Too tart for me even with 2 tsp sugar added. I used red wine vinegar, but next time I'll try the British standard malt.
