Chicken Enchilada Soup II
Really good start. I added extra chili powder and cumin, it was a little bland. I also added black beans, corn and green peppers, made it more of a meal.

Balsamic Vinaigrette
awesome, better than you can buy. i follow the recipe exactly except the i use regular balsamic vinegar. excellent chicken and shrimp marinade!

Roast Sticky Chicken-Rotisserie Style
Great Great chicken recipe. very simple. i made using one six pound chicken so cut to a 6 serving recipe. i did not have onion powder so i replaced it with some adobo. i rubbed the chicken with olive oil before rubbing the seasoning on and took the suggestion of putting some under the skin. I wrapped in the plastic wrap and left for 24hrs. i cooked at 350 for a little over 2.5 hrs, each hour i used the "misto" to spray with a little olive oil. It was falling off the bone and delicious. To make the gravy i took the drippings added one cup of water and one chicken bulion cube. boiled and stirred in corn starch. GREAT!
