This is an easy recipe and its great when the craving hits for banana bread. Very quick. I made mine in a muffin pan. It made 12 perfect size muffins. Next time I'm going to use buttermilk instead of milk. I have had banana bread made with this before and it is excellent. I also used about a half teaspoon of vanilla. I used one cup of mashed bananas and I may incrase this as well. Overall very tasty and will make again!!

Overall a good cake up it was a little tough and a little dry.

This recipe is easy and tastes excellent. The only thing I did different was not chill the dough, add about 1/2 more of flour and I added allspice instead of ginger.
