Wild Rice Casserole
This is a wonderfully healthy rice recipe. I love that you can just throw the rice in the pan with your favorite chopped vegies and put it in the oven (stirring every 20-30 min or so). I will definately be using this one again. Thanks Holly. (BTW...i added ginger, soy, and lots of garlic, and to me it was great this way)

Pasta with Asparagus
This is a great basic low fat recipe. It is wonderful because it is easy to add/delete the vegies you like or have on hand and create a healthy dish. I added broccoli and used fresh garlic, rosemary, and tyme, and used wheat pasta, and it was super. I had run out of parmesean cheese, and it was still good...i did use italian bread crumbs instead though.

Barbecue Beef Cups
This recipe was a great idea, that is a fun finger food, and easy for children to eat. I added a lot of spices (chilli powder, taco seasoning, garlic, onion, & Emerills hot sauce) to the ground beef, and it was delicious. I also used cupcake papers (sprayed w/cooking spray or will stick) and it made it easier to handle.
