Gary's Turkey Burritos

Reviewed: Feb. 8, 2012
Another of those "I hate to rate after making changes" but wanted to let you know that I really enjoyed this and like it much better than another burrito recipe I had been using. I had an open can of creamed corn from another recipe that I used in this instead of regular corn, and could not initially find hot tomato sauce so I used enchilada sauce and tomatoes with chiles. Was worried that the filling was too thin, then I had a great idea to mix the refried beans in with the meat mix and it thickened it right up! Needed the full 20 mins to simmer, too. When all was said and done, the mix had a wonderful sweet/hot thing working that I really enjoyed! I'm sure the sweet was the creamed corn and I felt myself wanting more of that taste, but at the same time wanting more heat. All in all, very good. My teen son ate 4 of these using smaller tortillas when we ran out of bigger ones!

Jan's Bread Machine Kaiser Rolls

Reviewed: Feb. 6, 2012
These were very good, but when I read the recipe I knew it sounded familiar. This is pretty much what is posted on the King Arthur flour site for Kaiser rolls, which I've made before. I would recommend you fix the ingredients as a couple are missing the unit of measurement.

Corn Potato Pancakes

Wish I could give this 4.5 stars. I liked it but wish the middle had firmed up a little more, and wanted more corn taste. A definite plus - kid who doesn't normally eat mashed potatoes ate it up!

Breaded Pork Tenderloin

Reviewed: Jan. 23, 2012
Absolutely wonderful. This is how we ate pork chops when I was a kid and I rarely cook them that way now. This gave me a chance to remember the old days. I used homemade breadcrumbs, seasoned myself. Pounded the pork thin, dredged in flour, then into the egg, then into the crumbs. Sauteed quickly, no need to go into the oven because they were very thin. This would be wonderful in pasta sauce then mozzarella & parmesan cheese, I think you know where I'm going with this!

White Bread For The Bread Machine

Reviewed: Jan. 22, 2012
Using the exact ingredients I made the dough in my bread machine, then took it out at the end of kneading and let it rise, then formed a loaf, another rise, and bake. It made a HUGE loaf and it was absolutely wonderful. Will definitely make this again. Like to use the bread machine to make the dough while I'm doing other stuff.

Garlic Alfredo Tilapia

Very much enjoyed this! I used Cajun seasoning since I didn't have creole, will have to get some to try it out. Also made a light Alfredo sauce from another site to go with this, everyone loved it!

Soft-N-Fluffy Hamburger Buns

Reviewed: Jan. 1, 2012
Very easy to make and delicious but mine did not brown. I went 12 mins then 2 more, then spritzed with butter flavor cooking spray and 4 more. Just started getting a light golden color but then had to be pulled. They were still soft though so maybe 12 mins is not long enough at 350? Anyway thanks for the recipe, will save this one! Used for sliders!

Amish White Bread

Very delicious and easy to make! Used this to make overnight French toast for Christmas morning breakfast. Some was left and had it the next day as regular toast, it was amazing!

Make Ahead French Toast

Reviewed: Dec. 26, 2011
Absolutely wonderful! Someone wrote a review for this stating they made their own bread using the Amish White Bread recipe, so I decided to give that a try. Thick, hearty slices were used. 12 or 13 of them, cut diagonally and layered. Mix was 1/2 cup whole milk, 5 eggs, 1 cup half and half, the vanilla and some cinnamon. Dipped and dunked bread, spread it out in cooking-sprayed 9x13 pan. There was maybe 1/4 cup of mix left that I drizzled over. Baked for about 50 minutes, it was fantastic. I agree that it's not like traditional French toast but it's delicious. You need to try this!

Very, very, VERY good! Made these smaller, for Thanksgiving dinner and while my baking inexperience may have led to rolls that were not perfectly shaped, they were delicious and perfect for small sandwiches with the leftovers!

Slow Cooker Lemon Garlic Chicken II

Made this as is...actually added extra liquid. 6 hours on low got me completely dried out boneless, skinless chicken. I will need to monitor more closely and not go as long. The juice/gravy was delish!

Jalapeno Popper Spread

Absolutely delicious, the heat hits you at the end. I added real bacon bits, too. This winter I am going to make this, add a link or 2 of hot Italian sausage (browned and crumbled) and stuff the mixture into jalapenos, then bake for a bit. I am guessing it will rock the football party.

An excellent change-up for pork chops, at least for us because we usually eat them grilled or smoked with BBQ sauce, or breaded and fried.

Good Old Fashioned Pancakes

Reviewed: May 4, 2011
Switched to this recipe from another I found elsewhere, and the family likes this one much better. With the other one the cakes were coming out undercooked most of the time, the batter was much too thick. I suppose I could have just added more liquid but I came across this one and it worked perfectly for scratch-made pancakes!

Charley's Slow Cooker Mexican Style Meat

Reviewed: May 2, 2011
Very tasty! Using many of the recommendations here, I added sliced onions and peppers to bottom of crock pot then put roast on top. Seasoned it with Adobo seasoning, cumin, garlic powder, chili powder, cayenne pepper. Added 1 cup of beef broth, can of tomatoes with green chiles, and 1 can of green chiles. Finally, added 1/4 cup of Frank's Red Hot. I was worried about the heat but it was fine. I used a 5lb chuck roast and cooked on high for 7 hours, then shredded and returned to liquid-filled crock for another 90 minutes. That was key.

Applesauce Pork Loin

Reviewed: Mar. 14, 2011
Made exactly as stated with a 3lb pork loin. As many others stated the outside of the roast is very flavorful but the inside was not. Need a way to get this sauce into the middle of the loin so that should give you some ideas. I brined my pork loin for 4 hours before cooking and that helped with the moisture.
