Chocolate Eclair Dessert

This was really good! I wanted to keep eating it! Everyone loved it. We're not frosting people, so I wish that I could figure out a different topping.

Asparagus Parmesan

This is the only way we prepare our asparagus now! VERY GOOD! Another way to prepare it is in the oven. You can spray a pan with Pam, then you line up the asparagus and shake it a bit so all sides are coated with the spray. Then sprinkle with kosher salt and pepper. Bakes at 450 for 5 minutes. Then sprinkle with paremesan when you pull the pan out of the oven. Baking and spraying with a fat-free cooking spray may make it a bit healthier

Cha Cha's White Chicken Chili

This really is a fabulous recipe. If you are thinking it is too spicy, just omit the jalepenos. I add a cup or two more of chicken broth and I use different kinds of beans each time I make it. I love it with Black Eye Peas. We sprinkle green onions, cilantro, monterey jack cheese, crushed tortilla chips, guacamole, sour cream, and a lime wedge on top. SO INCREDIBLY GOOD! A real comfort food. This is almost just like the White Chili recipe from Beyond Parsley. A cookbook put out by the Junior League of Kansas.

Southwestern Grilled Chicken with Lime Butter

Superb! I've made this at least a half dozen times now and it is always a hit. Everyone raves aobut it. The flavors and the lime butter sauce are amazing. You can taste all the individual ingredients, and together it is so satisfying savory. The cocoa is a welcome addition to this southwestern style dish!
