About this Cook
Spending only four years of my life in Iceland, I never endured the traditional Icelandic cooking (although we would have rack of lamb for Christmas). My mother decided early on in our adventure that she would like to cook in an American fashion and that is precisely what our household grew up with. I was my mother's shadow and learned most of my techniques from her. She is an incredible baker and can make cream puffs that could cause anyone to drool! Hopefully I gained these invaluable skills while under her roof. I've been told I can "whip up" anything, but the only judges so far are my family members and the family I nanny for. I figure I should broaden my horizon.

Spanish, Mexican, Italian, Fish, Vegetarian, and the works.
My favorite family cooking traditions
Mac and cheese for the holidays and Grandpa's fudge. When I was younger my mother would prepare a traditional Icelandic rack of lamb.
My cooking triumphs
Getting a 12 and 15 year old to like veggie cooking.
My cooking tragedies
A try at Chinese cooking. The eggrolls were not so bad, but the other dish was a disaster.

Salmon Patties I
My husband and I really liked this recipe. I added "It's a Dilly" spice to the mixture and they came out wonderful. I also added just a bit more onion (about 1/2 a medium size onion). This is a recipe that is easy, quick, and delicious.

Tomatillo Guacamole
This is a delicious and seriously fresh dip. My hubby couldn't get enough of it! I made life easy and put all of the ingredients into the blender and used the pulse button. The consistency was creamy and a bit smooth. I added a whole jalapeno, some cloves of garlic, and some crushed red pepper on top of the hot sauce! We like it spicy! It came out delicious!

Spicy Grilled Shrimp
Great recipe! I am drooling thinking about it. My husband and I usually leave this recipe for our camping trips. We usually put the shrimp and all of the ingredients into an aluminum foil package to cook on the campfire. These are always tremendously good. I love the garlic and the Cajun spices.
