So many favorite things to cook, so little time! One of my favorite things is to cook a roasted chicken with chipotle sauce and rosemary on it (got it out of the Chevy's cookbook); after that I love to experiment with breads and desserts, especially chocolate or lemon desserts. Roast Turkey, pumpkin pie, and homemade Apple Pie are included in the family's favorite holiday meals. My mother was very fond of Apple Cobbler and every Sunday my grandmother would make "Babka', a yeast bread which is a kind of big loaf raisin and brown sugar Brioche. It was our Sunday breakfast for years. Grandma never measured anything, she just threw the ingredients together until she was satisfied; she would always set the bread to rise on the floor over the heat registers. The other night I realized I had run out of those little bricks of Achiote Paste, a key ingredient in my fajitas marinade. it was Sunday and no local Mexican markets were open, no local superstores carried it, so I created my own fajita marinade for chicken. My husband raved about it! I put in chili powder, oregano, garlic, paprika, cumin, cilantro, pineapple juice, lime juice, orange juice and white wine vinegar. The company meal was rescued, and everyone declared they liked it far better than my other marinade. One Christmas Eve, I got third-hand information on how to brine a turkey. This person raved about the juiciest, most flavorful turkey ever made- so I decided to try it. What we did on Christmas for dinner, after that first bite of turkey, I will never recall, but I must have missed a step in the process- it was soooooo salty and completely inedible! Even the gravy was unbelievably salty! My mouth puckers at the memory!
