Herbed Corn

I really, really enjoyed this. I had it as a side dish with a baked ham and it went faster than anything else! Thanks for the recipe.

LIZZY217's Lamb Gyros

Reviewed: Jul. 21, 2009
This was absolutely amazing. I didn't use the brandy, and I used flatbreads instead of pita pockets. I think I would also prefer thin strips of lamb instead of chunks, so I will try to do that next time. But overall, it was so, SO delicious.

This was awesome. We make it without the alcohol, and we love it!

Fast and Delicious Black Bean Soup

Reviewed: May 16, 2007
I have made this recipe several times and our whole family likes it. I have made it with a can of refried beans instead of blended black beans, and we prefer it that way. I also add extra carrots and garlic, and pass on the sour cream.

Zesty Rice 'N' Bean Casserole

Reviewed: Mar. 5, 2007
We really enjoyed this dish. We didn't have kidney beans so we used chick peas (garbanzo beans) instead, and it was great. We also omitted the mushrooms and one of the green peppers. Otherwise, we didn't make any changes. My husband salted his, but I thought it was just right.

Chickpea Salad

Reviewed: Nov. 17, 2006
I really liked this salad, though I did make some changes. I used 1/2 of a green bell pepper in place of the cucumber, and I added garlic powder, salt, pepper, and coriander. I didn't have red wine vinegar so I used 1/2 cup balsamic vinegar, a splash of white vinegar, and some olive oil. I also added just a little granulated sugar. It was delicious!

Breaded, Fried, Softly Spiced Tofu

Reviewed: Sep. 21, 2006
My husband downed these tofu nuggets! I did make changes: I used some cornstarch instead of yeast; I also added some garlic powder to the flour. I didn't soak them in broth first so they kept more tofu flavor (my husband loves it). I fried them in a mix of peanut and sesame oil, and we dipped them in 2 sauces--one was a soy sauce/lemon juice mix, and the other was like marinara sauce. They were a yummy treat.

Sesame Noodles

Reviewed: Sep. 21, 2006
We thought this sauce was easy to make and very tasty, although I did change it a little. I used less sugar and no safflower oil, and cut the chili paste in half. We put it on egg noodles, on couscous with chick peas...my husband really loves this stuff!

Baked Chicken Nuggets

Reviewed: Sep. 21, 2006
We loved these! We liked the herbs and the parmesan flavor, and they were just crispy enough for us. Next time I will try dipping them in olive oil instead of butter, and I would love to try this with fish!

Moroccan-Style Stuffed Acorn Squash

Reviewed: Sep. 21, 2006
I really enjoyed this recipe. I took the suggestion from the last reviewer and added some apple and onion (instead of celery, but added a dash of celery salt). We ate the couscous mixture with squash last night, and for lunch today we ate it alone. Delicious!

Mom's Turkey Sausage Patties

Reviewed: Aug. 26, 2006
I thought these were easy and very flavorful. I did add a little bit of garlic, minced dried onion, and Worchestershire sauce, as well as some extra sage, and I cut down on some of the salt. I will be making these again soon.

Creamy Sweet Potato With Ginger Soup

Reviewed: Aug. 10, 2006
If I could have given this 3 and 1/2 stars, I would have. I liked it, but I thought there was just a little too much ginger and nutmeg. My husband thought it tasted like pumpkin pie soup! I will definitely make this again, but with reduced nutmeg and ginger. I think I'd also add some cumin, just to try it.

Creamy Potato Leek Soup II

Reviewed: Jul. 23, 2006
This soup was delicious, and the leftovers were even better the next day. I used half the bacon (turkey bacon) and mashed some of the potatoes like someone suggested to make it a little thicker. I also used milk instead of cream. The flavors are very light and subtle. A little salt, pepper, and a dash of garlic powder also add a nice touch. Thanks!

Award Winning Soft Chocolate Chip Cookies

These were really, really good. I used half butter/half shortening, and I put in fewer chocolate chips. These turned out great, and I will use this as my chocolate chip recipe from now on. Thanks for the recipe!

Chicken or Turkey Tetrazzini Deluxe

This was delicious and a great way to use leftover turkey! I omitted the green pepper and used white cooking wine instead of sherry, and I also used canned mushrooms. It was great!

Easiest Eggplant

I found out that I don't really like eggplant. It was easy, and I think that it would have been really good if it didn't taste like eggplant! It was worth trying, anyway.

Sloppy Joes II

Reviewed: Jul. 8, 2006
This is a very good recipe. I like to give this a little fiber by adding in a can of kidney beans and a handful of cooked wheat berries. That way there's always a little left over for lunch the next day! Thanks for a great recipe.

I thought this was a good recipe. I did have to add more chicken broth while the rice was cooking, but otherwise it was good and very easy.

Mexican Bean Pie

Reviewed: Jul. 8, 2006
This was good and very, very filling. I made some changes: used 2 cans pintos instead of black beans, added 1 Tbs. garlic and oregano and halved the cumin and chili powder, used a can of green chilis instead of jalapenos, and did one fewer layer in the cake pan. It turned out great. It does need the flavor from the salsa and sour cream though; perhaps next time I will mix in a little salsa. Overall, both my husband and I enjoyed it very much.

Blue Cheese Burgers

Reviewed: Jul. 8, 2006
If I could give these more than five stars, I would. My husband and I DEVOURED these burgers! I'm glad there are some in the freezer. I have never tasted blue cheese before, so I could definitely taste it in the burger--the flavor went deliciously well with the flavor of grilled meat. I did not have chives so I used dried minced onion, and I cooked them on the Foreman grill. This will be our new 4th of July treat!
