Wonderful recipe for a delicious, restaurant-quality meal! Have tried it twice and it was delicious both times. I used thin-sliced boneless pork chops for the meat, briefly sauteed with a bit of oil, salt and pepper and then cooled and chopped before stirring into egg mixture. Leftover chicken would work equally well. Was excellent with a Meridian chardonnay.
