Sweet Pork with Beets

This was a very good combination if you like beets! I didn't have any canned beets so I boiled some fresh ones and used the water I boiled them in for the sauce. I would suggest adding the suger gradually and tasting after each addition...I think I only ended up adding about 1/4 of a cup.

This was excellent! I didn't have any shortening so I used butter instead and made about 8 small shortcakes instead of 1 large one. They were delicious, no baking powder taste at all!

Colonial Pumpkin Bars

These are very good. Mine were cooked to perfection in 28 minutes, so I would recommend checking them early. Also, if you like lots of frosting you may want to consider doubling the frosting; I was barely able to cover them with a thin layer.

Southwestern Green Chile with Pork Stew

I roasted a bone-in pork loin for about two hours in a clay cooker with onions and peppers, then simmered it in the broth for about two more hours until the meat fell off the bones...it was incredible!
