Ukha (Russian Fish Soup)

We made this with salmon and really enjoyed it. It's very easy to make and easy to adapt to individual tastes. We like our food spicy so we added some hot pepper. Next time I will probably experiment with extra veggies to make it even more nutritious.

Turkey and Provolone Sandwiches

This was a great lunch. Substituted spinach and left out the olives. Spread mustard on the rolls. Will definitely make this again. Might add peppers next time.

Two Minute Chili Pie

We loved this recipe. We actually covered the top with pasty crust as well, so we didn't have any problem with our beans drying out. It's tasty as is, but I look forward to trying it again. I think it's a great base to add our own spin to.

Abalos-Style Hamburger Soup (Picadillo Filipino)

I thought this was a really good base recipe. I didn't have any fish sauce so I substituted with some chili powder. We like our food spicy anyway. I also added some celery because I had some to use up. I just threw everything in a pot and let it simmer. Really simple and really easy to clean up.

There was too much lemon juice. I think half a lemon would have been perfect. I had to add the whole bulb and more oil to try to try to tone down the lemon. I like my toum thicker so it was better after a couple of days in the fridge.

Strawberry Bread

This was my first time making bread, and despite my many mistakes, it turned out fantastic. I decided to go with three cups of strawberries and it was perfect. It had the perfect moisteness and was still good after a couple of days.

Tomato Zucchini Casserole

Our teenage guest wasn't a fan of this, but hubby and I really enjoyed the flavours. It was mouthwatering. We had the whole thing in one sitting. The only thing I did different was to saute the garlic with the onions for the topping.

Tomato Spinach Pizza

I made a nice lunch with this recipe. Instead of oil, I spread garlic butter on a large piece of naan. I stuck with the rest of the toppings and cooked it in the toaster oven. Very quick and simple to clean up.

Tomato Soup

I would have given this five stars, but my husband didn't like it with the carrots. I had to use beef broth because that's all I had. I did add chili peppers and meatballs just to make it a complete meal for us. It was a terrific rainy day supper.

Perfect Lobster Bisque

This was a great way to use up leftover lobster. I had to use condensed milk since I had no half-and-half. I also didn't have any chicken broth, so I added a can of bar clams with their juice. I also added a chili pepper, a clove of garlic and a tablespoon of tomato paste. It was a huge hit.
