Too Much Chocolate Cake

We loved this cake. I made it twice in one week--one for a co-worker and one for my family. In both cases, it was gone before the week was up. The second time I made the mistake of only adding 3 eggs and it didn't make any difference in taste or texture.

Churros

These were sooo easy and sooo good! I made one recipe as-is and it was plenty for my family of 4. I just used a plastic ziploc bag and cut the corner. My first batch came out about as thick as my ring finger--I thought they were a little doughy on the inside. So I cut the other side of the corner of the baggie smaller and they were more the size of McDonald's french fries. I thought the smaller ones were better--no doughy middle. That said, my family ate all of them with no complaints!

Flatlander Chili

This was really good. The flavor reminded me of the chili you buy at Wendy's--but better. I followed the recipe for the most part, keeping the spices the same with the exception of adding 1 TB worchestire. I used one 15 oz can of diced tomatoes and then filled that same can twice with tomatoe juice. It just seemed strange not to have some diced tomatoes in chili! I also added two drained cans of red beans, instead of 2 cups. Just read the recipe wrong, but I'm glad I did. I probably had an extra 1/2 pound of hamburger. One more comment: I made one batch the night before and the next one the next morning. The one that had cooked longer was less sweet... go figure!

Broccoli Chicken Casserole I

My family didn't love this. I followed reviewer suggestions and used cream of mushroom and cream of chicken soups and omitted the mayo. Then made the stuffing beforehand and added it on top, followed by some provolone cheese. The stuffing adds a lot of salt, so watch your seasonings!

Pumpkin Roll Cake

I made this last night and it really tastes great! (I omitted the nuts.) And it just looks so pretty! My only comment is that you should definitely spray and flour the waxed paper heavily before cooking. I did a light dusting and had a hard time getting the cake off the paper.

Crumb-Coated Chicken Thighs

This was just okay. I followed the recipe exact, except that I marinated the chicken in buttermilk for about 4 hours before coating and cooking. I just didn't like the blend of spices--a little too much for my taste. My family seemed to like it, although the leftovers are being tossed today so they must not have liked it too much.

Best Chocolate Chip Cookies

Nope, not the best. They cooked very thin flat and I like I softer cookie. Which really I should expected with a butter recipe (lower melting point, right?). I could have and added some additional flour and continued baking the rest, but instead I froze the dough--tastes better raw.

Meatball Nirvana

These were pretty good. Not as moist as I like but probably because they were baked and not browned in the pan. But perhaps healthier this way (?) I do like the little bit of hotness, but not sure that the kids did.

Chocolate Chip Banana Muffins

Really?!?! People like these muffins?? I found them to be brick-like. And only 2 TB of cocoa did nothing for the flavor, just made them brown in color. I did use veg oil instead of sunflower seed oil so maybe that was the problem (?). Blah.

Fluffy White Frosting

Love this recipe. My kids like marshmellow-tasting frosting instead of a butter or cream cheese version so this is great. It's also so cheap to make and frosts and entire two level cake easily. Spreads easy too.

Easy Garlic Broiled Chicken

I thought this was pretty good, and easy! I used 10 bone-in chicken thighs and adjusted the recipe to serve 6. I also removed the skin because I was using so much butter--enough fat already! I cooked for 45 minutes (15 min. @ 375 then 30 min. @ 400, flipped the chicken every 15) and then browned each side for 5 min. under the broiler. Realy economical--I think I paid $3.50 for the chicken. Served with roasted potatoes, green salad, jello salad, and french bread. And we have leftovers for tomorrow!

Baked Garlic Parmesan Chicken

I really liked how easy this recipe was. I added 2 TB of butter to the olive oil for flavor, and crushed pepperidge farm stuffing mix for the bread crumbs. And I always flatten chicken breasts that are baked so we can cut them with a fork. I sprinkled the top with mozz cheese about 7 minutes before it was finished cooking. Served with plain spaghetti noodles and a side of spag sauce for those who wanted it. Easy, easy, easy.

Tangy Slow Cooker Pork Roast

Me and the kids really liked this, but am only giving it 4 stars because my husband just thought it was okay. I would say, however, that we bought thought it was better than those flavored pork loins you can buy. The only change I made was to add some pepper flakes and cayenne pepper in place of the hot sauce. Oh, I did brown the pork loin in olive oil/garlic before adding it to the crockpot, where it cooked on low for 7 hours.

Italian Spaghetti Sauce with Meatballs

I made just the meatballs because I couldn't find my usual meatball recipe. I substituted a cup of Italian bread crumbs for the fresh, then browned in butter. I think the bread crumbs made for a drier meatball, but still better than frozen!

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

I thought this was an okay recipe--good for a fairly quick meal. But not great. I used cream of mushroom instead of celery. And I added about 1/2 can of milk to tone down the onion flavor, which was pretty powerful. I can't imagine adding a packet of dry onion soup mix as some reviewers suggested.

Cola Pot Roast II

Wow! This was oh-so-good pot roast! I followed the recipe exact, although I did sear the beef beforehand in butter/olive oil & garlic. After it was done cooking I scouped out all of the veggies and added some cold water w/corn starch to make gravy. The roasts I make in my crock pot come out extremely dry so this is now my go-to pot roast recipe!

Easy Breezy Casserole

This is a good recipe if you want to stretch a dollar. I only had 2 large chicken breasts and had to make a dinner for 4. There was plenty casserole, plus enough for my husband to take lunch tomorrow. I made the following changes: First, I cut the raw chicken into chunks, seasoned with poultry seasoning and garlic salt, then sauteed in butter and olive oil. I used 1/2 cup sour cream 1/2 cup mayo mixture. Added about a cup of shredded swiss cheese, and two cups of cooked broccoli. And I increased the amount of noodles (I cooked 1 1/2 cup raw). I would definitely recommend adding more noodles, it was my kids favorite part and we could have used more. Finally, I topped with crushed ritz crackers. Not bad...

Golden Potato Soup

We all LOVED this recipe! I 1 1/2 it for our family of 4 and it was plenty, with some for leftovers. I used American cheese and swiss cheese because I wanted to get rid of some in the fridge. The only change I will make next time is to not over cook it--many of the potatoes broke apart because I had it on the stove too long. But the flavor was still great! (Oh, I also added an extra 1/2 cup of water and milk to get the consistency I wanted.)

Enchilada Casserole II

This recipe is a great basic enchilada casserole! I'm only giving it a 4 since I didn't actually follow the recipe! But I hope to try it as-is soon. I had leftover shredded pork and corn tortillas so I used those two main ingredients, then added other ingredients to suite our tastes: rice, Ro-tel, black beans, taco seasoning, and enchilada sauce instead of tomato sauce. I actually made two dishes to freeze b/c we were sick of eating pork! Anyway, just cooked one up last night and the family loved it! I was afraid too b/c I'm not usually too good at wingin' it with a recipe!
