Artichoke Chicken

This was really great. I was hesitant at first because I don't usually cook with mayo. I used half mayo and half sour cream like others suggested. I also add lots of black pepper, paprika and granulated garlic to the mix. I seasoned the chicken before topping with the artichoke mixture. I served this over mashed potatoes. The hubby loved it! Will definitely make again.

These are delicious. I think they are the best chocolate chip cookies I have ever made. I have been searching for a good basic chocolate chip recipe and I think this is it!

Sweet Mustard Chicken Bake

This is an easy go to recipe. I make this in the winter when it is just too cold to grill chicken. I usually serve this with rice and green beans. The mustard to honey ratio is perfect. Nice and easy recipe.

Lemon Coolers

These are great lemon cookies. I make them in the spring when a heavy cookie is not what I want. The batter does get sticky but they come out great. Light and refreshing cookie.

Spinach-Stuffed Chicken

This came out great! I cut the recipe down for 2. I added some diced tomatoes, basil and Italian blend cheese to the spinach mixture. Instead of egg substitute I used one egg. Instead of putting melted butter on top of the chicken, I drizzled it with a very little bit of olive oil. It came out great. It was a lot of work for a week night meal, but it tasted absolutely delicious and was totally worth the effort.

Lemon Herb Barbeque Sauce for Chicken

This was a great recipe! I make grilled chicken alot and I get bored with some of the traditional marinades that I tend to use. When I read the recipe, it seemed like simple ingredients that I frequently use. However, to my surpise the chicken was very flavorful and moist. I substituted the vegetable oil for olive oil and the dried thyme for fresh thyme, and I marinaded it for about an hour and it was really delic. Thank you!

Quick Stuffed Tomatoes

Overall I thought this came out really good. I added some kalamata olives to the couscous and omitted the mint. I stuffed the tomatoes and put them on the grill. Before grilling them I added more mozzarella to the top so there was nice melted cheese top. It was great. Next time, I might add some garlic or something. It felt like something was missing.

Fresh Tomato Pasta

I make something very similar to this recipe and I absolutely love it!! Rather than use vegetable oil, I use olive oil. I also use fresh basil instead of dried and I use fresh plum tomatoes from the garden, seeded and diced. I saute some garlic in olive oil, add the diced tomatoes, salt, pepper, some of the basil and let it cook for a few minutes (not too long). Then I toss penne with the tomatoes, garlic and basil and add the remaining basil. It is a great summer pasta dish using fresh ingredients from the garden. I just made it again last night!

Romantic Chicken with Artichokes and Mushrooms

I thought it was kind of bland. I followed the recipe exactly and I felt the majority of the taste came from the canned artichokes, which tasted like tin. I will try it one more time and add some more herbs, garlic, pepper, and I will use fresh artichokes.

Grilled Chicken with Herbs

This came out really good. I was kind of hesistant to add 1/2 cup of balsamic vinegar because I thought the vinegar would overpower the herbs, but to my surprise it didn't and it was delicious. I used the marinade for chicken kabobs and I was only able to marinade the chicken for a little less than 2 hours and it still tasted great! Next time I will marinade it longer to get the full effect.
