Banana Muffins II

Excellent! I added fresh blueberries and they turned out spectacular! I think the key is very ripe bananas to give that sweetness.

Wonderful Banana Cake

Reviewed: Apr. 29, 2009
I made this cake for my son's 1st birthday & it was a HIT!! I simply followed the baking time on the cake package box and had no problems with it overcooking. Would recommend that to anyone wanting to make it! Thanks!

Fast and Delicious Black Bean Soup

Reviewed: Nov. 13, 2008
Muy delicioso! This was a great recipe for a nice, Fall evening. I omitted the bell pepper (hubby doesn't like 'em) and substituted cumin & garlic powder seasoned, bite size chicken for the ham. Also, I didn't have any sour cream to garnish the soup, but it actually didn't need it and I don't need the extra calories ;o) The fresh cilantro and regular tortilla chips as the topping was good enough for me! Will definitely make the recipe again...thanks!

Persimmon Cake

Reviewed: Nov. 11, 2008
I made this with some modifications, since I didn't have a 9x13 loaf pan (had that size in a cake pan, but not loaf): used a bundt cake pan and baked for 40-45 mins at 375. Turned out moist, but heavy. Next time, will only use 1 tsp vanilla (didn't need 2 tsp, felt it was overpowering). Overall, it's a good recipe...especially if you have persimmons that need to be used!

Southern Okra

Reviewed: Oct. 6, 2008
The okra was too mushy, sticky and sweet. I'm not sure where I went wrong, but I think if I made it a second time, I wouldn't boil the okra. I would just stir fry it.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Oct. 6, 2008
Unless you really have a sweet tooth, this recipe is way too sweet. I was surprised at how much vanilla and chocolate chips were used and against my first instincts, followed the recipe thinking that if it was a "5-star" recipe, it must be ok. Eww! Way too sweet. Also, these cookies are best eaten right away. They definitely don't taste the same the next day. I would make this recipe again, but will totally cut back on the amounts of vanilla & choco chips. Overall, the fundamental of a big, fat cookie is there...just gotta tweak it.

Apple Crisp II

Reviewed: Sep. 29, 2008
This was such a great recipe! Both my husband & I really enjoyed it. Next time, I want to bake it in a 8x8 dish to give it more volume for presentation. In a 9x13 pan, it's flat. Overall, great taste and easy to make. Thanks!

This was the easiest and fastest recipe to make! We thoroughly enjoyed it. The flavor was great thanks to the cumin. Would definitely make it again.

Korean BBQ Chicken Marinade

Reviewed: Apr. 8, 2008
A very easy & yummy recipe...can't go wrong with that combo! My husband loved it; even said that it should become one of our weekly dinners :) The only modifications I made were to the ginger (I didn't add it because I didn't have any) and the chili paste: didn't have paste, but had hot sauce and it seemed to work...gave it a nice little kick. Overall, a great recipe!

Amish Macaroni Salad

Reviewed: Sep. 4, 2006
This was by far the best macaroni salad that I've made. I didn't add the sugar, instead, I substitued the vinager with rice vinagar (adds the neccessary sweetness, without overpowering) and added a little Louisiana Hot Sauce for a kick. All the picky men in my family approved, so you know it's a good recipe.
