Eggplant Tomato Bake

This is a great option if you're trying to drop a few pounds... or even if you're not! Anyway, I put salt, pepper and dried basil on the eggplant. Then placed the tomato on top and put the same seasonings on it with a light sprinkling of light mozzarella cheese. Two of these and some steamed shrimp made for a satisfying diet meal.

Honey Wheat Bread I

I made two loaves yesterday and they're almost gone! I did everything by hand and followed the recipe as instructed. I did use butter instead of shortening, 2% evaporated milk, and I increased the honey a little. This bread is heavenly!

Chili-Lime Chicken Kabobs

Great marinade! I just did chicken breasts on the grill. I doubled the recipe, increased the lime juice by 50%, and added some fresh and finely chopped cilantro. Soooo good!

Tortellini Soup I

Amazing soup! And incredibly easy too. I added more tortellini and beef broth so there would be more of what the kids would eat. I also added more zucchini and omitted the bell peppers. The flavors in the soup complemented eachother beautifully, I think this is the best soup I've ever made. Served with a little mozzarella and some warm white bread rolls. It was very filling and perfect for a chilly night.

Chicken Enchilada Soup III

I followed the recipe and had a taste and found that it was pretty bland. So then I began to add some more flavor and ended up with a fabulous soup! I added 1/4 c enchilada sauce, 1 c cheese, 1 c broth and a little salt and pepper. In addition to adding flavor the broth thinned out the masa harina a bit which was initially way too thick. This is a great recipe once you kick up the flavor a little. I served tortilla chips and chopped tomato to add as well as avocado slices on the side. Yum!

Pesto Pasta with Chicken

I really enjoyed the flavors of this pasta dish. I used the marinade to cook the chicken in and added a little extra garlic. The sundried tomatoes really add a lot. I was however, dissapointed with how dry it was. I used less pasta than what was called for. Perhaps I'll look for a creamy pesto version of this recipe.

Blonde Brownies I

Yum! These are sooo good! I only slightly changed the recipe by adding choc. chips to the batter and then sprinkling a few on top. Because of the kids, I only added nuts to the top of the grown-up half. I used 2 egg whites but kept everything else as instructed in the recipe. Then I lightly sprayed the baking dish with Pam. Once baked I let it cool for about 23 mins, it was still warm but not unmanagable to cut. After having made it there's nothing else that I would change for next time. Some reviewers complained about the vanilla, butter and baking soda, but it was a perfect combo for me. I will be making these again for sure!

Apple Cinnamon Oatmeal Bread

This is a wonderful recipe! I used nearly 2 oatmeal packets inside the batter and added a dash of cloves. I also used 1/2 c. splenda and 1/2 c. sugar. Then I added 4 egg whites in place of 2 whole eggs. I don't usually change up recipes to make them healthier, but it was fabulous with them. The remainder of the ingredients I followed as directed. I made them into muffins baking them at 350 for 16 minutes. The smell is heavenly and the taste is even better! Thanks for a super easy and delicious recipe!

Pumpkin Chocolate Chip Muffins

This is a great recipe that turns out moist and beautiful. I've made them a couple times and must say that they are much better without the choc. chips. You must know that I am a total chocoholic, but the chocolate overpowers the fabulous pumpkin flavor. These muffins taste best with chopped pecans instead, everything else, follow as directed. They're great!

Maple-Garlic Marinated Pork Tenderloin

Great recipe! I read the reviews and came up with a winner! I used the mild and creamy Grey Poupon for the dijon mustard. I used jarred minced garlic and olive oil instead of sesame. I used 3/4 c. of regular syrup and added 1 tsp. of soy sauce. This created the perfect marinade- sweet but not overpowering. I pierced the meat with a fork and placed it in a large baggie and marinated over night. To cook, I placed it in a 13x9 sprayed with Pam and then sprinkled the tenderlion with some salt and dried minced onion. I baked it in the oven at 375 for 35 mins (it was only a 1 lb. loin). Meanwhile I boiled the marinade to reduce and cook it. I sliced the pork and drizzled the marinade over top. Served with broccoli, roasted potatoes and biscuits. Great meal! Wonderful flavor!

Meaty Tomato Soup

This turned out well. I used all italian turkey sausage, added some corn, italian seasonings and more pasta. The meal was hearty and healthy. I only cooked it for four hours on high. It thickened up nicely on it's own. I would make it again.

White Cake Frosting II

I followed the recipe exactly. It went on well and looked beautiful, but it tasted exactly like what it was... sugar flavored shortening. Not so appetizing. I will try it with butter next time- that sounds much better.

Pinwheel Italian Calzones

I give this recipe 3 1/2 stars. I left out the onion and bell peppers and added 1/4 tsp onion powder and 1/4 tsp garlic powder. The filling turned out very well. I found that I do agree with many other reviewers who said that the crescent roll dough was too rich. I'm sure if I tried the recipe again with a pizza dough I will like it much more. Also, make sure you use a pizza sauce that you really like. We used the Contadina brand and we were not impressed.

Shrimp Etoufee III

My first attempt at etoufee and I was pleased. It doesn't look very appetizing, but it's a tastey and filling meal. I halved the recipe and added brown rice. The butter flavor was too much for me so I will be sure to use less next time... it's really not necessary. The kids enjoyed it (which was a shocker to me), I'm sure that I will make it again.

Fabulous! I actually followed the directions from reviewer 'ilstu99' posted underneath the recipe. Even with her changes it is still a cake; not a bar. But SO good! I did follow the original recipe for the cream cheese frosting. This was the best frosting I have ever had! Excellent cake! I will be making this again for sure!

Shrimp Versailles

This was a really nice meal. I used precooked shrimp, doubled the green onion and added about 1/2 tsp. of minced garlic. I used reduced fat cream cheese which was fine but I could kinda tell so I won't do that next time. The sauce was incredibly thick so I doubled both the milk and chicken broth (in replace of the wine). Even with the extra liquids it was very thick and rich. I served it over rice as many reviewers suggested, but after having had the dish I think that pasta would have been MUCH better. Oh- and I doubled the bread crumb mixture over top. It turned out great, served with steamed asparagus.

Chicken 'n' Stuff

Not bad, just not really good either. I stayed very close to the recipe only switching out chicken broth for the wine. My husbad and I thought it was alright but my 3 little ones would hardly eat any of it. For that reason, I won't be making it again.

Toll House Crumbcake II

Very good! I halved the recipe to fit a 8x8 but kept the original amount of topping. I used mini morsels and decreased the amount for both the topping and the cake. I slowly poured in the choc. chips and mixed them in until it looked like a good amount. Because I halved the recipe, I baked it at 350 for about 36 mins. It came out perfect.
