About this Cook
I've been cooking since I was a kid, pretending to be Julia Child and making "salads" with leftovers from my mom's dishes. As a Type 1 diabetic since the age of 3, I grew up with an interest in nutrition and later earned a B.S. in nutrition in Massachusetts. After co-supervising and directing dietetic departments for several hospitals, I've simplified my life and enjoy cooking healthy, organic meals for myself, my husband and kids, friends, and family.
My favorite things to cook
Bread, baked goods of my own creation, omelets, honey ginger chicken, baked tilapia, stuffed chicken breasts, roast beef, trifles, home made italian tomato sauce and meatballs, fresh chutney
My favorite family cooking traditions
Irish - boiled dinner (corn beef dinner) Italian - spaghetti and meatballs and homemade sauce German - Pot roast
My cooking triumphs
My cooking triumph would be the day that my husband and I bought a new blender and I made a frappe and pulled the bowl off the base properly and enjoyed a deliciously chocolaty coffee frappe.
My cooking tragedies
I was excited to use my brand new blender/food processor that I had received for a wedding shower gift. I added all the ingredients as my husband looked on hungrily. I finished and went to take the bowl off the base; however, I didn't remove it properly and ALL the concoction poured out and onto the base and the engine of the blender. I cleaned up and proceeded to make another smoothie -- managing to make the same mistake a second then a third time. Needless to say, the engine burnt out and my brand new blender was trashed.

Pork Chop and Potato Casserole
I can see how if you only make this recipe according to the instructions given, you wouldn't like it. Here's what I did and it came out great! Season chops with salt, pepper and granulated garlic. Saute chopped onion, celery and garlic - set aside. Brown the chops in same pan. Add sauteed veggies. Add the shroom soup (I used Amy's organic cream of mushroom soup in place of the freaky brand name MSG soups) and potatoes. Simmer covered as directed. YUM!

Awesome Slow Cooker Pot Roast
I made this just as directed except I added several chunked potatoes to the crock pot and served it with fresh steamed farmer's market carrots. Yum!
