Broccoli Chicken Salad

Reviewed: Jun. 16, 2009
This was excellent! Just like what you pay $10 for a tiny little container of at Byerly's - and I made a huge bowl of it! I used Helman's Light Mayo, no sunflower seeds (just didn't have any), Craisins, and Bacos in mine. I loved it. My 4 year old said he loved it too. I asked him what he liked about it and he said "EVERYTHIG". Too cute!

Cilantro Cucumber Salad

Love this! So simple it's not even funny. By itself - maybe not too impressive - but the possibilities are endless. My favorite way to serve it is with grilled boneless skinless chicken breasts and feta cheese. Yummy and healthy!

Antojitos Minis

These were really cute. I love small things like this. I used wonton wrappers instead of tortillas though. I liked them, but I will try tortillas next time. I think they will be stronger :)

Garlic Mashed Red Potatoes

Yum! These were great! I only wish I would have added some minced garlic during the mashing process as well to make it extra garlicky. Even my brother's super picky girlfriend ate them and loved it. Try these!

Green Bean Casserole I

This was great! Just like mom makes. I had so many things cooking on Thanksgiving though that I ran out of baking dishes so I actually cooked it in the crock pot instead and it was wonderful!

Candied Yams

Apparently this was great! In fact, I should have made much more. I didn't even get to try it becuase it was all gone in minutes. I think it would be just as good without quite as much butter and brown sugar though. Enjoy!

This was delicious! This was my first time making a turkey and everyone said that it was wonderful - don't tell my mom - my dad said it was better than hers :)

Crispy Coconut Chicken Fingers

Reviewed: Apr. 9, 2008
I loved this recipe! Just made it for a baby shower on Sunday and they were gone in 10 minutes! I did follow the suggestions of using the Panko Japanese bread crumbs instead of flour and I used a butter spray instead of melted butter. I coated the bottom of my baking pan with melter butter and then sprayed the chicken as well. I had to cook it a little longer than the recipe called for, but mine came out crispy. I really liked this recipe a lot! I served it with the Dijon/apricot dip as well as spicy spring roll dipping sauce. Thanks a ton! Ok, I am adding to my review. I have made this recipe now 7 times. Besides the first, all by request. This is an awesome recipe. Use Crisco Olive Oil spray instead of butter to make it more healthy and more crispy. This is a 5 star recipe, don't let others fool you. I am catering for a small wedding today and through word of mouth from this recipe, they requested that I cook for them. Awesome!

This was great! I served it over chicken coated in baked, crisp plantains, sauteed white onion, sauteed green bell pepper and jasmine rice. Fantastic sauce!

Caribbean Chicken

Reviewed: Jan. 13, 2008
I must say that this chicken was so tender. It really was the most moist chicken I've had in a very very long time. Great chicken! Now, I'm a strange person, everyone else who rates this loves the fruit, but I didn't like the fruit with it at all. I will make the chicken again, but I will serve it with a Spanish rice or something. Still a 5 though!

Chicken Costa Brava

Reviewed: Jan. 8, 2008
This was fantastic! I also added extra spices as well as some course ground black pepper. I wish I had added more olives and pineapple as I did not have as much on hand as the recipe called for. I served it over a Spanish rice/orzo blend. I will make this again no doubt!

Tortilla Rollups IV

Reviewed: Dec. 30, 2007
These were fantastic. I did modify them, I used taco seasoning instead of ranch, I added black olives and sliced green onions. I used jalapeno cheddar and spinach flavored wraps instead of the tortillas, but it was really great. I made them for 3 events over the holidays and people finished them off every time! The only suggestion I have is to not cut them when they are not really cold or they will end up sort of squished. If you want them to look like the picture, make sure you layer the toppings pretty thick and cut it when it's pretty cold. People will love these if you make them!

Greek Saganaki

Reviewed: Dec. 21, 2007
My boyfriend and I have saganaki every time we go to a Greek place to eat and we love it! This was not the same, but I loved it's unique flavors. I waited until the outside of each peice of cheese was slightly brown then turned them. It was so creamy and warm. We just loved it. Thanks!

Artichoke Spinach Spread in Wonton Baskets

Reviewed: Nov. 11, 2007
This was wonderful. I did not have mini muffin pans either, so I used the bigger ones, but I layered them and they turned out fine. I also baked the cups until they were crisp then added the spinach dip in and sprinkled them with shredded parmesan until it was brown. I had two of them, when I came home the next day my boyfriend had finished them ALL, I think he liked them too :)

April's Roasted Red Pepper Cheese Ball

Reviewed: Nov. 11, 2007
This was great! I used more garlic salt, cayenne, and roasted red peppers than the recipe called for, but I loved it! I also rolled it in fresh cilantro instead of parsley because I like cilantro more and I had alredy chosen to make mine a bit spicier, so I though cilantro would give it a good kick and it did. Try this recipe, you'll like it!

Stuffed Chicken Valentino

Reviewed: Nov. 11, 2007
This was great. I made mine with sun dried tomato because that's what I had. I served it over bow tie pasta with sundried tomato alfredo, halved grape tomatos, and I put the chives in the pasta because I forgot to use it when the recipe called for it. It turned out wonderfully though. Enjoy, I did!

Puppy Chow

Reviewed: Oct. 22, 2007
Very good recipe. I love puppy chow, but have never made it before. I wish though that I had read the other reviews suggesting butter before I made it because I had a hard time getting to chocolate to melt and smooth out, but the finished product was very tasty!

Jalapeno Popper Spread

Reviewed: Jul. 5, 2007
I made this for a pre-fourth of July party and it went over so well (everyone was trying to guess what made it so creamy... hint: it's the mayo). Recipe is perfect. Wouldn't change a thing and I will make again and again. The only thing I did different was keep it in a crock pot to keep it warm and double the recipe! Thanks!

Very tasty, used a little extra garlic and cilantro and therew in avacado because it was going to spoil. I tossed it with linguine, crushed red pepper, grilled pulled chicken breast, some fresh avacado slices, tomato, and red bell pepper. Delicious!

I didn't actually make the burgers. I just wanted a cucumber sauce to make what I call Greek Tacos, it was fantastic! I don't think I could have found a more authentic tasting recipe. Thanks!!!
