About this Cook
I've worked in restaurants for years, so I've always had the luxury of having someone else cook up for me whatever I dreamed. Now, however, I'm a new mother and I don't have the time to go out for nearly each meal, so I've learned to cook all my favorite foods and new creations at home. I never knew cooking was so much fun!
My favorite things to cook
Chicken! I love chicken anything and I have had so much fun creating new dishes with chicken. I love to stuff chicken brests with wild rice and top with yummy cream sauce or I might get crazy and have grilled chicken over a cilantro lime rice served with veggis and topped with a peking sauce. I think I love stuffing egg roll and wonton wrappers with crazy stuff all the time too!
My favorite family cooking traditions
I wish my family had cooking traditions other than during the holidays. No one really knows how to cook except for me, they all want to come to my house so that I will cook them dinner, even though I have an infant at home. They are very proud of my new found talent! My mother does, however, have a chocolate mayonaise cake recipe that has been passed down from her mother that is delish!
My cooking triumphs
My cooking triumphs would probobly be making something that my brothers picky girlfriend would eat. That made me happy. I consider every meal that my boyfriend kisses me and tells me how great it tastes a triumph! My cranberry puffs are up there too! Check out the recipe :)
My cooking tragedies
Along with the good comes the bad. The first time I fried the intricatley stuffed egg rolls wrappers I burned them to a crisp. They were black and unedible. I've also managed to forget to add oil to a cake that I made and you can imagine how disgusting that turned out. Whoops!

Broccoli Chicken Salad
This was excellent! Just like what you pay $10 for a tiny little container of at Byerly's - and I made a huge bowl of it! I used Helman's Light Mayo, no sunflower seeds (just didn't have any), Craisins, and Bacos in mine. I loved it. My 4 year old said he loved it too. I asked him what he liked about it and he said "EVERYTHIG". Too cute!

Cilantro Cucumber Salad
Love this! So simple it's not even funny. By itself - maybe not too impressive - but the possibilities are endless. My favorite way to serve it is with grilled boneless skinless chicken breasts and feta cheese. Yummy and healthy!

Antojitos Minis
These were really cute. I love small things like this. I used wonton wrappers instead of tortillas though. I liked them, but I will try tortillas next time. I think they will be stronger :)
