Bread Pudding I

The best remedy for stale bread is to tear it into pieces and bake it in milk, eggs, sugar and spices. Call it bread pudding and devour it still warm with a luscious lemon sauce.

These brownies have been a favorite in my family since I was a small child. Because they're so popular, I usually double the recipe. Great with chocolate frosting!

This large 9x13-inch crisp is made hearty with cooking oats mixed into its sweet crumbly topping. Underneath are all the lovely things that compliment apples -cinnamon, brown sugar and butter. Serve warm with rum raisin ice cream or a big dollop of freshly whipped cream.

Lentils are added to sauteed onions, carrots and celery. Lots of crushed tomatoes and water are added, and the magic begins. An hour later the soup is thick and wonderful and ready for a bit of shredded fresh spinach and a splash of vinegar.

You don't have to use powdered mix to make your own falafel! Mashed chickpeas are combined with onion, bread crumbs, egg and herbs, and fried. Serve with the cucumber sauce in a pita with tomatoes.

Chicken Makhani is one of my favorite Indian dishes. It is a full flavored dish that complements the chicken well. It can be made as mild or spicy as you wish by adjusting the cayenne.

This dessert is so good yet so easy to make. Fresh peaches and a sweet crunchy topping give it comforting flavor. I like to dish it up warm with a scoop of frozen yogurt. --Leona Luecking of West Burlington, Iowa
