Me & Mine
About this Cook
I've lived 'by the sea' all my life and I cannot imagine living anywhere else; by 2008 I'll have worked in healthcare for 20 years; I love cats and presently have a male cat named Brainerd who is half white and half orange tabby; I love cooking but hate washing dishes, lol!
My favorite things to cook
casseroles; crockpot meals; freezer jam; microwave candy
My favorite family cooking traditions
My family's never REALLY been ones for 'tradition' (which I've always found sad) but at Thanksgiving I'm always asked to make my 'special' mashed potatoes, my 'autumn' stuffing and my 'secret' crudite dip; for Christmas I'm also always asked to make my Christmas Tree cheese spread
My cooking triumphs
for Christmas season 2005, I learned to make fudge; I'd never tried making any kind of candy before so it was a real challenge! This summer (2007) I learned how to make freezer jam and I've been treating my co-workers to the sweet results ever since! I've also recently purchased a crockpot and I'm testing all kinds of main dish recipes!
My cooking tragedies
The time I tried a recipe for this kielbasa/cabbage stir-fry for a friend, who was not only sweet enough NOT to laugh at me, but actually ate it and then told me it was delicious, LOL...Then there's the time I inadvertantly doubled the salt called for in my favorite peanut butter cookie recipe *yikes* I had to toss out a whole batch that smelled wonderful but tasted awful!

Sunflower Oatmeal Cookies
Interesting flavor combination, although I omitted the coconut...I'll make these again, but they're so different, I can't see myself doing them on a regular basis...A fascinating experience!

All-Day Meatballs
I'm gonna have to go with a middle-of-the-road rating on this one...While they came out lovely tender, in future I'll be making several changes...First, I'll be adding some seasonings to eliminate the sheer BLANDness of these meatballs...Second, I'll cut back the milk to ¾ cup to reduce the excess WETness of the meatball mixture...I'll also skip the ketchup based sauce and replace it with either sweet + sour sauce OR BBQ sauce OR chili sauce...I also found that they cooked rather quickly, so I'll reduce the cooktime by half, in future...Thank you anyway for posting this recipe, as it gives me a nice jumping off point for many other variations.
