Beef Cabbage Hash
Really great base recipe. I cubed the potatoes, then microwaved them for 2 minutes to get them partially cooked, chopped the onion, used beef stock instead of water, and threw in a can of condensed tomato soup. I then let it cook on low for about 45 minutes with the lid on, and then about 10 minutes with the lid off until I was happy with the consistency.
