Low-Fat Macaroni and Cheese
This was tastier than I thought it was going to be. I had to add salt to taste and to make a healthy crunchy top, I mixed 2T. of parmesan cheese with 1 1/2T. of wheat germ and sprinkled that over the top before baking. We're vegetarian, so I also sliced up some veggie dogs and tossed those in for som added protein. My husband and toddler loved it!

Jay's Signature Pizza Crust
Oh man, this was SO good. I made a bbq chicken pizza on it, using bbq sauce, canned pineapple tidbits, shredded mozarella, and precooked chicken breasts from the refigerator section of the grocery store. The dough was a little too big for my pizza stone, so I rolled up the edges so it would fit. My husband loved the way it turned out like a stuffed crust as a result. This is becoming a Friday night tradition for our family, and it is cheaper and tastes way better than the take and bake pizza we used to get. YUMMY!!!!

Ultimate Twice Baked Potatoes
60 minutes was not nearly long enough to bake the potatoes initially. They were hard, and the skins ripped when I tried to scoop them. They never did get completely mashed, so I had to scoop out the big chunks and add instant mashed potatoes to the filling so that it would be think enough. As a result, they were NOT good.
