About this Cook
I have been interested in cooking since I was a child, but I never actually applied myself to learning more about it until recently. I have found that cooking is very fulfilling and actually helps me to relax after a hard day at work. In addition I find great satisfaction in preparing foods that my wife and daughter really enjoy. I give a lot of credit for my renewed interest in cooking to all of the men and women who have submitted recipes and reviews on AllRecipes.com. I hope that the reviews of my recipes will aid me in the fine-tuning of my cooking skills.
My favorite things to cook
I enjoy cooking New England clam chowder. I use an awesome recipe from an old Better Homes & Gardens cookbook. I also enjoy cooking anything Mexican, because my wife loves Mexican food.
My favorite family cooking traditions
My parents did not have any cooking traditions that they handed down to me. However, my aunt would always make candy for Christmas, which she always mailed to the relatives before she had a stroke. This is a tradition that I would like to start again as well as creating some new traditions for my own family.
My cooking triumphs
I make "real mean" smoked pork steaks. I smoke them on my charcoal smoker/grill using hickory chips after seasoning the steaks with Lawry's Seasoned Salt or McCormick Season All seasoned salt. Each time I make them my family and friends rave about them.
My cooking tragedies
The first time I made rice pudding I made it for my wife as a surprise, because she was not feeling well. Unfortunately, I used too much rice, which I overcooked, so it turned out very pasty. I didn't want to make my wife any more sick than she already was, so I just threw the entire bowl of it in the garbage and started over. The second attempt turned out much better, and my wife loved it.

Fried Ice Cream
Try using Cinnamon Toast Crunch Cereal instead of Corn Flakes. Also, the reason why it fell apart for some people was because you didn't freeze the ice cream long enough. The best way to make fried ice cream is to prepare it the day before you plan on frying it. This way your cereal coated ice cream balls are nice and frozen. Also do the egg dip/cereal dip thing twice. Here is how it should be done: 1. Freeze the plain ice cream balls for 1-2 hours. 2. Dip in non-whipped beaten egg and roll in the cereal/cinnamon mixture. The freeze for 1-2 hours. 3. Dip in the beaten egg again and roll in the cereal/cinnamon mixture again and freeze for several hours (overnight is good) 4. Deep fry the cereal coated ice cream balls for 5 - 10 seconds. 5. Drizzle with honey and chocolate syrup. Top with whipped cream and a cherry.

Cathy's Banana Bread
This banana bread was wonderful. The best I have ever made. Of course, this is the first time that I have made banana brad. lol :o) I increased the amount of bananas, but the center sunk down. I will deffinitely make this again, but maybe I won't stir the batter as much when I add the flour mixture, and I won't let the batter sit for as long before getting it into the oven.

Fresh California Salsa
This salsa is absolutely wonderful! I had fresh salsa when I was a kid and ever since then the canned stuff in the store just didn't taste as good. I was thrilled when I found this recipe. I use fresh vegetables out of my garden. I use two cloves of garlic instead of three. I also add the jalapeno pepper 1 tsp at a time after the first initial two tsps. I like it hot enough just to notice that the chile pepper is there, but not hot enough to have to have a glass of ice water on hand. Thanks for the great recipe!
