Apple Raisin Bread

I cut this recipe in half, and it still made two very large free form loaves. I added about 3/4 cup of chopped dried apple, and still felt it could have used more raisins and apples. This makes excellent toast. Overall a good recipe, but I will play around with it some more, it still seems to be missing something.

Sugar Cookie Icing

Definitely lives up to it's reputation! This makes a nice shiny glaze that is the perfect consistency, and looks so professional. I let mine harden overnight. Very pleased with this recipe, thank you for sharing.

Cranberry Orange Loaf

Loved this! The orange and cranberry are a great combination. This is wonderful with a cup of tea. I left out the nuts and substituted butter for margarine. Excellent!

Baked Spaghetti Squash with Beef and Veggies

What a delicious way to eat your veggies! I used a very lean ground beef, one whole red pepper and no green pepper. It was wonderful! As another reviewer noted, the leftovers are even better! I will be making this one again, thanks for sharing such a healthy and yummy recipe.

Chocolate Spoons

I dipped my spoons in white and dark chocolate, then sprinkled with crushed Werther's to add a caramel flavor to the chocolate. So pretty, and such a nice hostess gift. A yummy little stir in for coffee or hot chocolate.

Cream Cheese Cookie Cups

Addictive! These are so quick and easy to make, and absolutely delicious. My husband is not a big dessert fan as a rule, but he took one bite and said "Oh my gosh!" I had no problem with the cookie cup sticking to the pan, and I thought the amount of filling was just right. I did decrease the amount of sugar in the filling slightly. Yummy!

Apple Coleslaw

What a clever take on coleslaw! The honey, apple and pineapple give it wonderful flavor, much lighter than traditional coleslaw. I had a fresh pineapple on hand, so I added about 1/2 cup of that, finely diced. I subbed cider vinegar for the white, but I'm sure it would be equally good either way. To make it a main dish salad, I chopped up a grilled chicken breast and added it in. A very delicious way to eat my fruits and vegetables, thank you!

All Day Apple Butter

I am giving this 4 stars because as written it would have been way too sweet. Per other reviews, I used 2 cups of sugar total, 1 each of white and brown sugar. That was the perfect amount for my taste. Also, I definitely need to cook on high uncovered for a good 2-3 hours to get the right consistency. The spices are perfect. I have made this recipe a few times, and will continue to use, with modifications.

Beef, Burgundy Style

This was absolutely wonderful. I made a couple of very small changes - I added some minced garlic with the onion, and baked in the oven at 275 for about 3.5 hours. This was a little too long, I will try a couple of hours next time. The flavor of this was so rich and delicious. Having just made Julia Child's classic - and very time consuming - Boeuf Bourguignon just a couple of weeks ago, I can say without a doubt that my whole family preferred this version.

Cottage Cheese Pancakes

Very tender and delicious. I used an immersion blender to smooth the cottage cheese before mixing in the other ingredients. I used whole wheat flour instead of white, added a pinch of salt and a bit of vanilla. A nice, healthy breakfast option.

Triple the Ginger Cookies

These are very good cookies, but I don't think they're quite as good as Trader Joe's addictive Triple Ginger Snaps. It is definitely easier if you buy minced crystallized ginger - the Ginger People sell a terrific one. Tasty, just not out-of-the-ballpark great.

Slow Cooker Buffalo Chicken Sandwiches

We enjoyed this very much. Since we're not all fans of spicy food, I used a bottle of Frank's sweet and spicy buffalo wing sauce. Perfect amount of heat. I used bone-in chicken breasts, removed from the bone when tender, and put the shredded meat back in the crockpot for a bit to soak up the sauce. I drizzled ranch dressing on top of each (I'll try bleu cheese dressing next time)- the cool creaminess was a perfect foil to the spicy heat of the sauce. So easy to make, and quite tasty!

Black Magic Cake

I only had Dutch process cocoa on hand, so I used that, and the cake still came out perfectly. Thanks to other reviews I didn't panic at the thin batter! The cake was moist with a deep chocolate flavor. I made a 13x9 cake and topped it with Fluffy Peanut Butter frosting. Everyone loved it, and it was so easy to make.

Fluffy Peanut Butter Frosting

It is amazing to me that anyone could make this recipe and not give it 5 stars!!! It is fabulous, as light and fluffy as any buttercream - if you beat it for a few minutes. I sifted the powdered sugar, and beat in half and half (had it on hand) till it was the right consistency. Then beat it some more just to make it good and fluffy. :) Tastes perfect, neither too sweet or greasy. Excellent on Black Magic cake. Wonderful, super easy recipe.

Boston Baked Beans

I was looking for a recipe that didn't use canned baked beans, and this was exactly what I wanted. I doubled the sauce (except for the salt) per other reviewers suggestion, and it was just perfect. They had just the right amount of sweetness. Brought them to a cookout, and they were the first thing to go! I will use this recipe anytime I want delicious homemade baked beans.

Oven Pot Roast

Fresh Peach Angel Pie

This was a nice light fruit pie. The texture of the crust is interesting, chewy in a pleasant sort of way. The flavor of the coconut goes well with peaches. I did feel that the filling lacked something, though. Maybe a little sugar would have helped, although I used ripe peaches.

Cucumber-Mango Salsa

This was so flavorful and refreshing. Left out the jalapenos, as I don't care for the heat. I served it with grilled salmon, it was a perfect complement. It takes just a few minutes to put together, and the colors are gorgeous. It would be delicious stirred into chicken salad or served with tortilla chips. I'll be making more today!
