This was FABULOUS! I made this for Father's Day and it was a huge hit!! I took the advice of some other reviewers and used Kahlua instead of rum. I also basted the lady fingers with the coffee/kahlua mixture instead of drizzling. I also did not have a 7x11 dish, so I used a smaller one and made 3 layers instead of 2. Great recipe, thank you!

Pork with Peach and Black Bean Salsa

My husband and I both thought this was fantastic. We served it over white rice. Great flavor. Very filling. I doubled the recipe to freeze half for an easy dinner some other night. I also added the full can of black beans (so 2 cans total since I doubled it).
