About this Cook
I have lived in California all my life. I have a beautiful family. I love to cook, grill, grill and grill some more. I coach jr football, assist freestyle wrestling and follow my kids (4) to all their school and sporting activities. Football, wrestling, Basketball, Soccer, etc.
My favorite things to cook
I love to BBQ and grill. Spare Ribs, whole chickens, Tri-Tip and Shrimp are my specialties. Mexican food is my next favorite, I love crunchy tacos with, grilled talapia, grilled striper, slow cooked and shredded venison and elk.
My favorite family cooking traditions
Just about every holiday I will BBQ and invite the whole family out. Since being diagnosed with Type II Diabetes I have spun around and am dabbing in grilling fish, veggies, and fruits. It's different but it's on the grill.
My cooking triumphs
I BBQ'd for a private party of 100.It was a big success. My brother and I cooked: Spare Ribs, 1/4 chickens, whole chickens, hot links, garlic buttered grilled shrimp, chili beans, potato salad, macaroni salad, grilled corn on the cobb and home made salsa. It was delivered 30 minutes ahead of schedule. Since then we have cooked for them several times.
My cooking tragedies
My first time on the grill alone I burned all the food. My Dad had to rescue me. I can't remember what we ate after that but that sure was a lesson learned. He did try to work with me but as a teen I thought I knew it all, this was 26 years ago. He was the master of the grill and since then I have improved dramatically. I appreciate you Pops

Smoky Four Cheese Macaroni Bake
I tried this recipe this past weekend. It was a big hit, I used rigatoni for noodles, formed bread crumb shells in a muffin pan then loaded them up and topped them with sprinkled bread crumbs and greated paramsen cheese and baked them. I also substituded jack for pepper jack for a little kick. They popped out nice after cooling for about 10 miniutes, I will be doing this one again. the rigatoni noodles pushed serving suggestion from 8 to 13. Thanks for posting the recipe!

Slow Cooker Baked Beans
This recipe was great. I needed something simple for a dinner party on Father's Day. This did not take any time away from attending other foods. Once prepped and in the cooker I left it alone. I will be using it again.

Pineapple Macadamia Chicken
Excellent! I grilled my chicken with a vinigarette until slightly charred. Man... this is a great recipe. I'll be making this one again, and again, and again...
