Downeast Maine Pumpkin Bread
Great bread, I did all the substitutions that were recommended; the first time I made them I didn't have any apple sauce to use instead of oil, but I did the second time around, and I felt that the bread was much more moist using the applesauce. I made it without any additions (such as nuts, raisins or chocolate chips) but the bread is not overpowering and you could easily include any of those things. I think a light cream cheese glaze on top would make it a 5 star bread!

Peanut Butter Bars I
I have always loved Reeses Peanut butter cups - and these bars are like Reeses Peanut butter cups from heaven. Everyone in the family LOVED them; my Dad said he could eat a whole pan. I've made them twice and they disappear every time. Be sure to pound your graham crackers into very fine crumbs if you like a smoother texture. Awesome recipe!!

Chocolate Cappuccino Cheesecake
I made my own coffee liquer using a recipe from this site - and I thought the cheesecake turned out good. It actually tasted a lot like the cappuccino bon-bons my Mom used to make. My only sore spot was the crust - I used oreo cookie crumbs because the grocery store didn't sell chocolate graham crackers - and the crust was rock hard and tasted slightly burnt. I think if I'd had and used chocolate graham crackers it would have worked better.
