I am recently married and trying to learn to cook. I am trying to make us healthy meals and I am not a big meat eater but my husband is just the opposite. It is quite a challenge! He gave in to trying salads though so I might not have to endure another night of meatloaf! We love ethnic food also and I come from a huge Italian family with great food. My mom is an amazing cook and makes everything from scratch but it is a little too advanced for me and intimidating! Do you know anyone who makes Beef Stew from scratch? We also love Southern Food (Thank God for Paula Deen) and comfort food. I just wish it was healthier. Working full time also means meals have to be made relatively quick!
My favorite things to cook
Mexican! Tacos, fajitas, enchiladas, burritos - you name it! I am also enjoying my slow cooker. I make lots of things with that.
My favorite family cooking traditions
All the great holiday foods, like the seven fish feast on Christmas Eve, and bunny bread and struffoli at Easter. I also love hard boiled eggs and biscuits on Sunday morning.
My cooking triumphs
Oh boy, I've had a lot more failures than triumphs! But my tacos, chicken enchiladas and ziti have gotten thumbs up from multiple people. I made a good rice and chicken casserole. (It was big enough for an army, but that's besides the point). Oh and I forgot - STROMBOLI - by far my most ambitious culinary experiment and it tasted great! Something we both loved and can be made with so many different ingredients. It tastes different every time you eat it. Update - doing a lot more cooking since I first joined here. Make a great chicken marsala and slow cooked pork spareribs. Also made a nice smoked ham. I have also delved into the world of cookies! i have always loved to bake, but not cookies. Now I make lots of them and my husband helps me decorate them. He is a much better artist!

Ham with Pineapple sauce, crab cakes, Pork with chunky applesauce. Really too many things to list.

Dutch Apple Pie with Oatmeal Streusel
Absolutely the best applie pie I have ever had! I used Macoun and Jazz apples and they were great. The only thing I changed was I added 2 tbls. of cornstarch to sugar mixture because my pie fillings are always runny. It came out perfect. I sliced apples thinly (not cubed) just like picture showed and I am glad I did. It was layers and layers of soft, sweet apples. I saw some reviewers who said bottom crust was not cooked all the way and a little soft. I love my crust like that and that is how it came out (I'm a little weird I guess), but that is an easy fix. Just brush crust with egg and bake 5-10 minutes before adding filling. My husband likes his crust crispy so I do that for him. Excellent, excellent recipe. Make this tonight!
