Western Broccoli
Didn't modify this recipe too much. Used non-fat dressing and cheese, and eliminated the salt, to make this a one-dish vegetarian meal for two. It was good, not outstanding though, hubby agreed. I like a similar salad I make with raisins and grated carrot much better, but this is more hearty and protein-rich with the beans.

Yakisoba Chicken
Great basic recipe. I used pork instead of chicken, regular spaghetti instead of the noodles called for, a splash of fish sauce, and lots of Korean red chili paste (probably 3 Tbs). I threw in a very large minced jalapeno, a few splashes of white wine, and a couple tsp. of fresh minced ginger because we LIKE spicy! I would have given this 5 stars but the half cup of soy sauce is just WaYyyyy too much. Cut the soy in half (at least) and it's a winner!

Stuffed Eggplant Parmesan
I did make a few changes: I added 1/4 cup of chopped parsley, 1/4 cup of Italian cheese mixture, some extra chopped garlic, some dried crushed chilies, and about an ounce of spicy sausage to the stuffing mixture - we like lots of flavor! Topped it with canned diced Italian tomatoes and cheddar cheese. It turned out really, really good!
