Easy Red Beans and Rice

Simple Time Pork Chops

Au Gratin Beef Bake

This was pretty good. I added some garlic powder, celery salt and red pepper flakes. I also cooked this on the stovetop instead of the oven. A fairly good meal for a cold and snowy day.

Farmhouse Chicken

This was a delicious and easy meal. I did not have any celery so I left that out and I added a handful of cheddar cheese to the soup mixture. A nice meal to have on a cold and snowy day.

This is very good. I used a small yellow onion instead of shallots. I also had no wine so I used all water. My husband said the sauce was good but it needed more so I will double next time.

Shepherd's Pie Mexicana

This was good. I used can corn because I hate the taste of frozen. I also don't use packaged seasonings so I used 1 Tbsp of cumin and chili powder and a pinch of crushed red pepper flake. I also heated to milk and butter before added them to the potatoes.

Cheesy Macaroni and Beef Casserole with Thyme

This is ok. There is a lot of macaroni though. I used a full pound of beef and there was still to much. I will half the macaroni next time. I used hot sauce and dijon because it is what I had on hand. It needs more flavor though. I may add some garlic powder next time and more hot sauce.

Easy Cajun Jambalaya

We loved this recipe. I used beef broth and brown rice because it is what I had on hand. Using the brown rice ups the cooking time to 40 minutes. This will become a staple in our rotation.
