Greetings from Ireland
About this Cook
I have a teenage boy, baby twins and one hungry husband to cook for. I learned my way around the kitchen from my Louisiana mama who could cook for an army with a little flour, sugar and salt. I love to cook from my garden produce and the holidays are spent baking gifts of bread and pies for friends and neighbors. We eat together every night around the table so it's important that I have a full arsenal of recipes at hand to keep the boys happy.
My favorite things to cook
I love making yeast bread, pumpkin pie from scrach and anything in my slow cooker. The boys love my chicken, zucchini and cous cous skillet and my home made cinnamon rolls. I don't own a bread machine and love making my whipped cream by hand.
My favorite family cooking traditions
At holidays I am the pie lady and I love to put together a Christmas morning brunch for friends and family to stop by and enjoy with us before they head off to Christmas dinner with grandma, last Christmas we had 23 people over in our tiny little house, a new record. If you live next door you can count on a Christmas quiche and I love that my son loves to cook almost as much as I do. I enjoy teaching him how to make bread and he has successfully made dinner for the family a number of times.
My cooking triumphs
Any time it turns out right and the boys love it is a triumph.
My cooking tragedies
Before we bought a new stove, any meal baked in my old worn out Kenmore oven was a tragedy. My loveley new Bosch is my pride and joy and I keep her clean and shiny.

Cheddar Buttermilk Biscuits
Oh my heck, these were the best biscuits I've ever made and I make alot of biscuits. I omitted the cayenne and probably came closer to undercooking these than overcooking them so they were just light golden brown and I made them really big. Oh man soooo good I think I'll write this one down and replace my Betty Crocker recipe with it!

Honey Curried Roasted Chicken and Vegetables
This was so delicious! I followed the one reviewer who simply oven roasted the veggies first, set aside and roasted the chicken then the last 20 minutes tossed it all together in the oven with the glaze then served. It's true, you will want to double the glaze and the veggies because they are so incredable please note I omitted the onion and just used garlic powder because I was feeling lazy but it didn't affect the outcome as far as I'm concerned. Hubby couldn't stop praising this one, its a keeper for sure.

Fast and Delicious Black Bean Soup
5 stars just because this recipe is so versitile. I used left over shredded pork instead of ham and added an extra carrot and more broth and more cumin. Really tasty and easy! Served with the buttery corn bread recipe on this site.
