Fresh Vegetable Stir-Fry with Peppery Orange Beef
I had some prepackaged stir-fry veges (peppers, onions, sugar snap peas, broccoli, carrots) and added some mushrooms. Otherwise I followed the meat/sauce exactly. This turned out great. Hubby didn't eat the veges (never does) but it was a great meal we could both enjoy. Look forward to the leftovers and I will be making this one again.

Baked Penne with Italian Sausage
This was tasty and easy. I also "doctored" up the sauce with some basil, oregano, crushed red pepper and dash of sugar. I also used whole grain penne to sneak some extra fiber in. This will be added to the rotation.

Peaches and Tequila Sunrise Sauce
Made this with pork tenderloin and it was yummy! Marinated for a few hours (could have been a little longer) but the boiled sauce on top is what really makes the flavor. I would be curious to try this with chicken as well, but it was great with pork tenderloin.
