About this Cook
I'm a mom. So cooking is sometimes rushed between getting from one activity to the next :)
My favorite things to cook
Chicken, especially the thighs and the livers (my favorite parts!) I love to play around with cheesecake recipes!
My favorite family cooking traditions
Once a week cleaning out the fridge and making 'something' with what you find there!
My cooking triumphs
I think I have the perfect way to bake cheesecake without any cracks! We've all heard how the water bath is the secret, but we all shy away from it because the foil always seems to leak. My boyfriend found a bargain last year at Thanksgiving...Turkey roasting bags, (see below), now I set my cheesecake in the bag, roll down the extra to the top of the cheesecake pan, set it in another pan, fill with water about 2/3 of the way up the cheesecake pan! No Cracks! Perfection!
My cooking tragedies
Ha! Those turkey bags he bought... he bought them to try to put the chicken into them and cook them on the grill... Heeheehee up in flames!

White Chocolate Raspberry Cheesecake
This was the very best cheesecake EVER! I did make some changes, I added a brownie mix on top of the cookie crust, baked that for about 25 minutes first, I used real white chocolate squares instead of the chips, I like the flavor much better! I also used seedless jam to save time as many others suggested. I baked the whole thing in a water bath, I use a turkey roasting bag to set the cheesecake into to keep the water out instead of foil, works great, just roll the edge down! Baked about 1 1/2 hours. It was to die for!!! FABULOUS!!!! The best Valentines cheesecake ever!

Butterscotch Fudge
I was looking for a fudge recipe that didn't use marshmallow fluff. After reading the reviews I was worried that it wouldn't turn out, so I read the information about perfect fudge, if you take this fudge to 234 degrees when you are stirring it, it will set and be perfect! The recipe directions aren't very clear on how much to cook, but that really worked for me!
