I am 51 years old, have lived in Florida for 20 years. I worked at Kennedy Space Center for 10 years, and decided to do something I would really love, so I went to school to become a Professional Dog Groomer, and opened my own shop 4 years ago...just love it!

My favorite things to cook are casseroles, real detailed meals and deserts.
My favorite family cooking traditions
The usual...ham on Easter, Turkey on Thanksgiving, etc. There a few Polish traditions I have picked up from my husband which includes Cream of Mushroom soup on Christmas Eve, and Pork and Sauerkraut on New Years Day.
My cooking triumphs
I made Thanksgiving dinner for 35 relatives one year! Whew...what a job, but it came out really well.
My cooking tragedies
I made a birthday dinner for my husband a couple years ago, and it was just a simple box recipe that my son said was yummy...well...not when you mess it up totally!! What a disaster! I still hear about it to this day!

Enchiladas
This is totally delicious and easy to make. There is no need to fry the shells though. They roll up easy and it's less fattening to leave the oil out. You can make these quickly and it looks like you spent hours. Add black olives, refried beans...or garnish with sour cream when finished...and it's a real winner!! It's a winner without adding any extras as well. I plan on trying the Red Enchilada Sauce from this website like another member suggested!

Quick Chicken with Asparagus and Provolone
The chicken was very moist. However, if I make this again, I will not add the Provolone cheese until the end...maybe last minute, because it melted into a big, rubbery glob. Also...I think a whole can of chicken broth is way too much.

Chuck's Favorite Mac and Cheese
This was absolutely delicious! However, I think next time I will prepare it without the breadcrumb topping...just a preference. When I take out the breadcrumb topping, I will probably add 1/2 cup of milk as others said they did, because I imagine without the breadcrumb topping holding the moisture in, it could become a little dry. Also, I agree with Amy D., better to mix in bowl, and then place in the baking pan because it's easier to mix up. I really did love it though. Very tasty!!
