Creamed Chicken for Biscuits

Reviewed: Dec. 16, 2010
Great recipe! I used canned chicken because I was running on time but next time I would definitely boil and shred the chicken to put in it. I doubled the seasonings, did not add the vegetables or almonds, and don't double liquid as some people say to do unless you want a TON of liquid and a little bit of chicken. I used the heavy cream and it was awesome. I don't know if it was the doubling of the liquid or what, but I had a hard time getting it to thicken up so I added more and more flour to it. I did add a chicken bouillon cube to the liquid as it was cooking and it added a more "chicken" flavor and was good! Will definitely make again!

Beefy Rice Dinner

Reviewed: Jun. 28, 2010
Such an easy way to change up a basic box of Rice-a-roni and make it into a meal rather than a side! We don't use celery or the green pepper but it is still yummy! The kids even eat it up!

Ham and Swiss Braid

Reviewed: Jun. 28, 2010
I tried this with the croisants because I love the way they taste....and it was a little difficult to do the braid since the dough tore apart easily, but it's pretty good other than that. Each person in my family is picky in their own way so I only did the ham and slices of provolone cheese and it was pretty good! Very basic but good.

Tater Tot Casserole III

Reviewed: Jun. 27, 2010
I'm rating this a 4 because we had to make changes, however we DO love it. Adding that much milk was just too much for us...made it too soupy. I added shredded cheese into the mixture until melted (I probably used about 1 cup of cheese). I also use a pound of ground beef. I like my tater tots crispier than this recipe makes them, so if I have time, I bake the tater tots by themselves for a bit before putting them on top of the meat mixture. Otherwise, it is an easy and excellent recipe!

Turkey Tetrazzini II

Reviewed: Dec. 27, 2009
This was a hit with my entire family. The reason I am giving it only 4 stars is because it was a little bit bland tasting...but it was still excellent. I followed the recipe exactly with the exception of adding almost 1/3 cup more flour. Will definitely make again!

Easy Turkey Gravy

Reviewed: Dec. 14, 2009
This was the best gravy I have had in a LONG LONG time. I am not a fan of the "giblet gravy" my family makes so this time I tried this and it was awesome. We made Thanksgiving dinner for my husband's employees who had to work that day so I doubled the recipe and it was way too much. The original amount was more than enough for my family of 4 and 4-8 employees. Oh and instead of the turkey stock we used the remaining juices from the Turkey after we pulled it out of the oven and I think it truly was the key to making it so good.

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Dec. 14, 2009
My first attempt at this was a huge success. I did add a little more cinnamon (using 2tsp) and nutmeg (using 1/2 tsp) though. I cooked this on a jelly roll pan lined with wax/parafin paper. I inverted immediately onto a new piece of wax paper and covered it with an additional piece of wax paper. I rolled it up within about 5 minutes of it coming out of the oven. I let it cool for at least 30 minutes before putting the filling on it. For the filling, I let the electric mixer whip it up for a while for a more creamy texture. I did not use all of the filling as I found it to be too much. Rolled it back up in wax paper tightly and stored in the fridge for a few hours before sprinkling with powdered sugar (did not put the powdered sugar on the wax paper as it says). This was so much easier than I expected it to be and will definitely be making it again for Christmas!

Cheeseburger Meatloaf

Reviewed: Nov. 10, 2009
Excellent! Even my 3 and 5 year old picky kids wanted seconds. I made a few changes though combining this recipe and one I was given from a relative. I mixed 1/2 cup ketchup, the eggs, seasoned bread crumbs, 1/4 cup minced onion, some onion salt and pepper together before adding the ground beef. I sprayed foil with non-stick spray and flattened the meat out over it. I spread 1/4-1/2 cup ketchup over the meat and I did not have shredded cheese so I used 4 slices of American and placed it over the meat. I used the foil to help roll the meat up (rolling from the long side). I then transferred the roll and the foil to a jelly roll pan (easier cleanup!). After cooking for 50-60 minutes I used 3 more slices of cheese (cut diagonally) and layed them on top and put it back in the oven for 5-7 more minutes. (The American cheese part was from the other recipe I had. I would like to try the shredded cheese part but I really liked the American Cheese melted on top. Gave a nice presentation and tasted great!) ***UPDATE: The second time I made this I tried it with the shredded cheese (2-3 cups) on the inside and it was much better than the sliced cheese. I still used the slices on top for presentation purposes and this was a huge hit with everyone!

Slow Cooker Beef Stroganoff I

Reviewed: Sep. 20, 2009
Had a good taste, but I am not fond of mushrooms (I can handle the tiny ones in cream of mushroom and I like the flavor of the soups, just not the big sized mushrooms). I substituted beef broth for the water and added about 1/3 packet of onion soup mix. I like my stroganoff to be more runny, I guess gravy-like, so I would add more beef broth.

Sloppy Joe Sandwiches

These were pretty good.....perfect on a night that you have ground beef and no clue what to do with it! We left out the mustard because we are not fans of it, but later put it in because I guess the point of it is to counteract the sweetness of it all so luckily we couldn't takste it! (Oh and we put in less than the full amount of mustard).

Florida Strawberry Muffins

Reviewed: Jun. 2, 2009
My boys and my husband really liked these....I have had two and still haven't decided what I think. I used cinnamon in place of the nutmeg, 1/2 cup brown sugar in place of the 1/4 white cup when mixed with the butter and I am not a fan of chunks in my muffins so I pureed my strawberries but am thinking next time I will go with the chunks due to it didn't provide a very pretty appearance. I also used a container of frozen strawberries (but thawed them in the fridge the night before). I microwaved the sugar and strawberries for 25 seconds instead of waiting an hour. Overall it was an easy recipe and my goal was met by providing muffins for my boys as an alternative to the sugar filled poptarts and cereal!

Slider-Style Mini Burgers

Reviewed: May 27, 2009
Excellent recipe! I did not put them on a pan, rather just wrapped in the foil and straight in the oven. I was a little skeptical at first thinking the buns would get soggy and they did not. I used the Beefy Onion soup mix and it gave excellent flavor. I didn't use mayo or pickles, as most of my family doesn't like them. I halved the recipe and the one cup cheese was not enough so I would definitely use more next time. I used the buttery top King's Hawaiian rolls and they were a HUGE hit! Even my 5 year old ate 3 of them and he usually is not a fan of hamburgers or anything like it! Thanks for the recipe!

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 15, 2009
I'm going to give this 5 stars because it is an excellent recipe, I just changed a little to make it better. First I used frozen chicken breast and cooked it on high for about 8 hours. Instead of water I used chicken broth (water is fine, but the broth adds more flavor) and you definitely need some sort of seasoning on the chicken. I only used one can of biscuits and tore them into quarters and that was plenty. I cooked them for the last 45 minutes of it all. My picky kids even loved this recipe!
