I'm a college student and athlete in the midwest who is always looking for opportunities to cook something vegetarian with some element of protein and lots of flavor. There are hardly any foods I don't like...I'm the type of girl that will want some Kraft Easy Mac one day and fresh pasta primavera the next. I always save room for dessert so I look for ways in recipes to cut down on unnecessary fat while still keeping flavor.
My favorite things to cook
I will cook anything with tomatos, artichokes, spinach, eggplant, and mushroom. I will probably save any moderately easy dish with three or more of these ingredients to my recipe box.
My favorite family cooking traditions
Almost any cooking traditions we may have had in the past have fallen to the wayside now as everyone on our family tries to lead their packed lives. Before I go back to school each term my mom will always make fried eggplant with tomatos, which I used to fool myself into thinking could be healthy but is really just delicious. I only eat bananas that are slightly green, and no one in our family likes them overripe, so banana bread is found baking in our house often.
My cooking triumphs
If I can cook things that people my age will eat and like, that's all I need to be satisfied with my skill.
My cooking tragedies
When I was younger my sister and I made dinner for my mom's birthday. I think it was some sort of dish involving cream of mushroom soup...I'm from Minnesota, but I still cannot stand casseroles with cream of mushroom soup, and as it turns out, neither does my mom. I have not tried to cook a single thing with it again.
