Refreshing Summer Orzo Salad
Don't change a thing! Unless you add some cherry tomatoes. Made this with a lemon marinated lamb chop and roasted beets. Very filling, I cut the recipe in half and it made enough for 6 servings!

Roasted Beets and Sauteed Beet Greens
The beets were awesome & simple, just like my mom used to make. The greens I won't do again. They were soft but bitter. Not that tasty. I might cut them smaller and add to an orzo for the nutrients. The beets I cut in half before baking but they still were al-dente, not soft enough, after 1 hour. They were hard to peel so we just ate the peels, we didn't even notice they were still on. The beets are just so flavorful this way.
