Out of 29 years in the Food Service Industry, nearly every job, I've ended up baking.

My favorite family cooking traditions
If possible, I will make it from Scratch....Years ago, the Methodist Men's kitchen crew at our monthly meeting, were making breakfast. Our kitchen leader, "Mr. Fred" (an attorney) loved having everything accounted for. One guy was frying up bacon, one prepping the eggs, etc. I was making the biscuits from "scratch," for 45 to 50 hungry guys....Here, I had flour, crisco and buttermilk, etc. up over my wrist, and remembered the classic baker's joke to play on Mr. Fred. "Pssst, Mr. Fred!" I whispered to get his attention. He hurried over. "Mr. Fred, I've got a serious problem! I've lost my band-aid! What should I do?" If you could have seen the look of shock on his face! I gave him a few minutes to fret about our problem....He came back over and just as he was ready to tell me what to do, I told him, "gotcha! It's a baker's joke!!" The look of relief on his face was again, hilarious!....After the guys had eaten, and the program was over, Mr. Fred, told everybody about the joke.
My cooking triumphs
It looks like I'm a "roller" of foods....Appetizers, enchiladas, pastries. My next project is to learn to make my own egg rolls. It can't be that difficult. I've read lots of the related recipes and procedures, so I'm 'gonna try some soon.
My cooking tragedies
As a guy that loves Mexican food, I haven't been able to master guacamole ...In my last attempt, it was too hot for me!!! I know I did something wrong. . When my brother Jon makes it, he makes it right at your table and it comes out wonderful!
