Really good! The only substitution I made was one cup of yogurt for the cup of sour cream. Yum!! I'm going to make this again as cupcakes for my kids' birthday party.

Brown Rice, Broccoli, Cheese and Walnut Surprise

Really, really good! Everyone in my family enjoyed this, from my husband down to my 10-month-old (sans nuts). I did make a few changes. I added more veggies (cauliflower, broccoli and carots). I didn't have instant rice, so I cooked regular brown rice on the side first, steamed the vegetables seperately, and then added all the ingredients together in the end.

Citrus Garlic Shrimp

I made this with slightly less citrus (in each ingredient), and my whole family loved it, including guests and small children! Serve with a really good crusty bread.

Super yummy!! This was the perfect dough to use with my three-year-old daughter. The frosting could be tastier, but it's easy to work with and dries nicely. We will use this recipe every time!!

My husband called this one of my best recipes yet! I made a few changes: Substituted 1/4 cup Italian dressing for the wine; substituted 2 tbsp tomato paste and 1/4 cup water for the ketchup; skipped the tarragon and vinegar. I served it over spaghetti, and it is definitely a family favorite!

Zucchini with Chick Pea and Mushroom Stuffing

This is a great, healthy recipe. The zucchini boats would make nice side items, and my husband and I even ate them as the main course. As one reviewer already stated, the secret is in pureeing the filling before baking in the zucchini shells. I used my Magic Bullet to puree the cooked filling. It was so good, even my 2-year-old daughter ate it!

Zucchini Crepes

I really liked this recipe. My husband and I both love crepes and we have lots of summer zucchini to eat. I did modify it a bit: 1) I used a different crepe recipe; and 2) I skipped the last part of step 3 and all of step 4, i.e. I didn't bother with making a sauce for the top of the crepes or baking them in an oven. Seemed a bit much for me and I liked them as is, eating them more soft-taco-style.

Grilled Fish with Nectarine Mint Salsa

Yummy!!! What a great summer fish recipe. I used cod; for the salsa, I left out the mint and jalapeno (I had neither, plus I didn't think I would miss the mint) and it was still super tasty. So glad I tried this recipe; I will definitely make it again.

Crescent Beef Casserole

This was sooo good! My husband loved it. I did make a couple substitutions, just based on what I had on hand: red pepper instead of green, 2 tbsp tomato paste plus water instead of tomato puree, and shredded cheddar instead of feta. I also followed another reviewer's advice to bake the potato crust a bit before adding the other ingredients. I will definitely make this again!
