Incredibly Cheesy Turkey Meatloaf
I'm not a huge fan of meatloaf, but loved this. Just a few changes: added a packet of reduced sodium onion soup mix (as others suggested), used shredded cheese, and added chopped spinach. The chopped spinach might sound odd, but it tasted great. My kids didn't even complain about the green stuff hiding in their meatloaf. Oh, and I didn't use ketchup...

Scott Ure's Clams And Garlic
This was easy to prepare and tasted almost as good as a traditional white clam sauce. I only had two dozen clams on hand, but I added a can of baby clams (with juice) to make extra sauce to go with linguine. If I could give it 4.5 stars, I would.

Easy, Cheesy Zucchini Bake
I made this tonight with a few changes. I browned the ground turkey, added finely chopped fresh spinach, chopped zucchini, and frozen corn. Following another reviewer's suggestion, I added cumin & chili powder to season it. I skipped baking it in the oven & skipped the spaghetti sauce (totally forgot about adding it, but liked it without), but still added shredded cheese. The casserole was served over brown rice. My kids gave it two thumbs up, though my son picked around the zucchini. Next time I'll probably add some minced garlic to give it a little more flavor.
