About this Cook
I am married and have 2 boys (14 and 13) and one daughter (8). I am a very busy mom as both boys play hockey and travel baseball, and one plays football. I love to cook and often cook for my husbands co-workers when they decide to come over on their break (usually an hour warning...thanks dear!) I have a twin sister who loves all recipies also, she goes by jdsmom, so often try the same recipies. I am also currently teaching my kids, and my oldest sons buddies how to cook. They each have a night where they pick whats for dinner, and I help them make it.

My cooking tragedies
When I was pregnent with my first child, and newly married, my husband called and said he would be home in 10 minutes for dinner. What was I supposed to make in 10 minutes!!!! Well, since I was pregnant, pizza rolls and onion rings sounded the best to me. Hubby was less than thrilled, and to this day will not eat pizza rolls.

Whit's Chicken Enchiladas
WONDERFUL! Even my "taco/mexican" hating daughter loved this one. I just cut up some boneless chicken breast, I did not use bone in, so much easier that way. For our family tastes, I did a little less of the jalapeño, I still used it, just not so much of it. Awesome recipe

Buttery Corn Bread
I have been looking for a good cornbread recipe and I found it! Moist, buttery, perfect! It did however make a little too much for the four of us, so I will probably cut recipe in half next time and bake in 8x8 pan instead

Chicken Piccata II
Very good! Store was out of chicken breasts (I know, can you believe it!) So I used the chicken strips instead, turned out great. I did take chicken out and put in oven at 200 degrees while sauce was cooking, so chicken would not get soggy. Put chicken back into sauce for last few minutes....it was awesome, will definitely make again
