Honey-Garlic Glazed Meatballs
We loved this recipe! I used about 2/3 chili sauce to 1/3 ketchup (because I was low on ketchup), and added about 1/4 cup more honey. I served these over homemade "smashed potatoes" (skins on) and steamed, buttered brussel sprouts. My husband says this makes the best meatballs (the meatballs themselves w/o sauce), and said he couldn't wait to have leftovers for dinner tonight. I doubled everything, and only used about 1/3 of the meatballs in the sauce, and froze the rest for future dinners.

Chocolate Zucchini Cake III
I try to hide veggies in many dishes, and this worked perfectly! I couldn't resist telling my 9yo stepson as soon as he swallowed his first bite, and he still almost licked his bowl clean. I did sub 1/2 the oil for applesauce, then cut the sugar down to 1.5 cups, still plenty sweet. I have a wimpy grater so I gave up on it 5 min. in and added chunks of zucchini to the blender with the oil, applesauce and eggs. This one is definitely a keeper!

Slow Cooker Carnitas
This is very, very good. I too tripled the rub ingredients except for the cinnamon with fantastic results. I added a few splashes of liquid smoke before cooking, and crumbled a beef boullion cube into the crock with 2 cups water. Will definitely make this again. I like mine simple, with white onion and cilantro on a corn tortilla and a squeeze of lime. Delicioso!
