About this Cook
My husband and I moved to the mountains and built a log home in 2001. I now have lots of time to bake and cook and I really enjoy this laid back life style. Our main source of entertainment is getting together with friends for dinner. We started a dinner club with 4 other couples and it's been a wonderful opportunity to enjoy some really fantastic food and great friends.
My favorite things to cook
Mexican food, cakes, cookies, breads, seafood, soups & stews
My favorite family cooking traditions
When my kids come to visit I always make oven baked orange French toast for breakfast. I also make cinnamon rolls for different holidays. I like to make pancakes for my grand-kids and I make theirs in the shape of the first letter of their name. I also make Christmas cookies with my grand-kids.
My cooking triumphs
I made Bread Machine Bagels from this web site and they turned out so good!
My cooking tragedies
I made a tuna noodle casserole for my husband shortly after we were married 27 years ago. It was bad and I've never attempted another one.

Oven Fresh Seasoned Potato Wedges
These were so good! I made just like the recipe said. My potatoes weren't very big and I cut them in 8 wedges so the wedges were on the small side. After 25 minutes I turned them over and baked about another 5 minutes. They were crispy on the outside and very tasty. Will make again.

Uglies
I liked the idea of these but I'll use different filling next time. I used Sweet Baby Ray's BBQ sauce and that's all you could taste even though I didn't use the whole 1 1/2 cups.

Fish Tacos
These were fantastic! I followed the recipe exactly except that I added some fresh cilantro to the tacos. The sauce was really really good! I think I will keep some on hand to use on other foods.
