Lemon Chicken and Rice
I cooked the butter, garlic, carrots and onions for a good 20 minutes, then added the chicken, let that cook for a few minutes, then added the liquid. I made jasmine rice, added that, let it simmer out some of the liquid, and presto - a KEEPER! All 4 of us loved it. My two picky boys loved it. I used ingredients all the same. I used my Meier Lemons for a lighter sweeter flavor. THanks Kat!

Old Fashioned Potato Salad
I just made this and I love it. I couldn't keep my fingers out of it. It really reminds me of my mom's recipe - basic- but yummy. I have been trying to recreate it for the last 12 years since she died. Thanks a lot. Yumm Yumm!!

Camotes al Horno (Baked Yams)
My hubby who doesn't eat yams or sweet potatoes loved this. My kids, well, not so much. I went pretty easy on the toppings, so maybe next time, I will put a bit more. I baked my yams in a 350 oven for over an hour, and they were still firm in the thicker spots. We shared one that was done, I left the others in the oven until soft, and now I have lunch for the next few days. Easy to transport, nutritious, and easy to reheat, even tastes good cold.
