I'm married, have four children ranging in age from 11-28, have four grandchildren . Right now I work part-time at a state college in Nebraska, hoping to move to full-time at some point. We live on a farm and we raise and preserve a lot of our own vegetables, we raise hogs too. We always have a freezer full of fresh pork and beef! Good fresh farm food!
My favorite things to cook
I love this website! My favorite things to cook are trying things from all of you! When my family asks me what's for dinner, I say it's a surprise, and more often than not we all LOVE the newest recipe!
My favorite family cooking traditions
We are of Scandinavian descent so there are those things we have like lefse and swedish meatballs. I'm going to start this year learning how to make the lefse (it's a flat potato "bread" that looks like a flour tortilla. My kids like butter and sugar on it, but you can also use it for cheese or meat spreads, etc.

Reuben Casserole
If you like Reubens, you will LOVE this! We will be making this as one of our regulars, even the kids liked it. I'm going to bring a pan of it to a function at work, so I'm going to double the recipe and relayer it twice. Thanks!

Swiss Chicken Casserole II
We loved it! It is so easy and so good! I had to use three very large chicken breasts and cut them in half, so I put a half slice of cheese on them instead. Had leftover (cooked) bacon in the fridge, so I crumbled that on top.

Cowboy Casserole
This is a keeper in our lineup! We had very little leftovers, which we took care of the next day. The day after that my son wanted me to make it again! I did, however, bake the biscuits seperately the second time, and we liked it better that way.
